CROCK POT PULLED PORK WITH SAUERKRAUT
Surprisingly tasty and the result of a mistake that left me needing to come up with a dinner with super easy prep. Freezer to table. I grabbed my crockpot, took a pork tenderloin out of the freezer stuck it in the pot & free poured apple cider I had on hand over it. Put it on & went to work. Later in the day the meat was cooking well, but for our tastes, I knew I had to kick up the flavor. I only had a few minutes to spare. That's when I came up with the other 2 ingredients. Tossed them in & turned down the heat & went back to work. How simple is that! I don't think I spent 5 minutes altogether!

PORK SAUTEED WITH SAUERKRAUT
I'm not sure if this is authentically German, but with pork, beer and sauerkraut it's close enough for me. This is excellent served over spaetzle.

Steps:
- Render the fat out of the bacon, then cook until crisp.
- Removed the bacon from the pan, without draining oil.
- Saute the onion in the bacon fat until nicely caramelized.
- Add the pork strips and brown on all sides.
- Add salt and pepper to taste.
- Add garlic about 1 minute before the pork is done.
- Add the sauerkraut and saute about 10 minutes, until the sauerkraut starts to brown and wilt a bit.
- Sprinkle the sugar over the sauerkraut and mix in.
- Mix the paprika into the beer, and add to the pan.
- Cook until most of the beer has evaporated.
- Season with salt and pepper to taste.
- Serve with reserved bacon crumbled on top.
Tips:
- Choose the right cut of pork. Pork shoulder or butt is the best cut for this recipe, as it is a tough cut that will become tender when braised in the slow cooker.
- Use a Dutch oven or slow cooker for braising the pork. This will help to keep the meat moist and tender.
- Add plenty of flavor to the braising liquid. Use a combination of spices, herbs, and vegetables to create a flavorful broth that will infuse the pork with flavor.
- Don't overcook the pork. Pork should be cooked to an internal temperature of 165 degrees Fahrenheit. Overcooking the pork will make it dry and tough.
- Serve the shredded pork with your favorite sides. Some popular sides include sauerkraut, mashed potatoes, and green beans.
Conclusion:
Shredded pork and sauerkraut is a classic comfort food dish that is easy to make and always a crowd-pleaser. With just a few simple ingredients, you can create a delicious and hearty meal that is perfect for a weeknight dinner or a special occasion.
