GOURMET SHRIMP ENCHILADAS
This recipe was given to me a few years ago. It is absolutely mouth watering. The fontina cheese is a must, though a little more expensive. I wouldn't recommend trying to make these without it. Light cream cheese and sour cream can be used in place of regular. Enjoy.

Tips:
- Prep the Ingredients: Before you start cooking, make sure all the ingredients are prepped and measured. This will help the cooking process go smoothly and quickly.
- Choose Fresh Shrimp: For the best flavor and texture, use fresh shrimp. If using frozen shrimp, thaw them completely before cooking.
- Cook the Shrimp Properly: Shrimp cooks quickly, so be careful not to overcook them. Overcooked shrimp will become tough and rubbery.
- Use a Creamy Sauce: The creamy sauce is what makes this casserole so rich and flavorful. Use a good quality heavy cream or half and half for the best results.
- Add Vegetables: Feel free to add your favorite vegetables to the casserole, such as broccoli, bell peppers, or mushrooms.
- Top with Cheese: The fontina cheese adds a delicious flavor and texture to the casserole. You can also use other types of cheese, such as mozzarella or cheddar.
- Serve Immediately: This casserole is best served immediately after it is made. The shrimp will become tough if the casserole sits for too long.
Conclusion:
Shrimp and Fontina Casserole is a delicious and easy-to-make dish that is perfect for a weeknight dinner or a special occasion. The combination of shrimp, creamy sauce, and fontina cheese is simply irresistible. If you are looking for a new and exciting casserole recipe, give this one a try. You won't be disappointed!
