1 cup brown rice
1 ⅔ cups water
3 tablespoons butter
3 tablespoons olive oil
2 cloves garlic, minced
½ cup white wine
2 tablespoons fresh lemon juice
1 ½ pounds medium shrimp - peeled and deveined
¼ cup chopped fresh flat-leaf parsley
½ teaspoon cornstarch

Steps:

  • Combine the brown rice and water in a small saucepan. Bring to a boil, reduce heat to low and cook until all the water is absorbed, about 25 minutes.
  • Melt the butter with the olive oil in a skillet over medium heat; cook the garlic in the butter and oil until fragrant, 1 to 2 minutes. Pour in the wine and lemon juice; reduce heat to medium-low and simmer. Stir in the shrimp and cook until the shrimp turns pink, stirring regularly, 5 to 7 minutes. 2 tablespoons ketchup
1 teaspoon chili-garlic sauce
4 teaspoons vegetable oil
1 1/2 cups cooked long-grain white rice, chilled
1 teaspoon toasted sesame oil
Kosher salt and freshly ground pepper
8 ounces large shrimp, peeled and deveined

Steps:

  • Whisk the dressing from the salad kit with the ketchup and chili-garlic sauce in a small bowl; set aside.
  • Heat 2 teaspoons vegetable oil in a large nonstick skillet over medium-high heat. Add the vegetables from the salad kit and cook, stirring, until just starting to soften, about 30 seconds. 1/2 cup chopped watercress
1/4 cup shredded carrots
1/4 cup frozen peas, thawed

1 teaspoon soy sauce
3 cups cold cooked brown rice
1 tablespoon chopped scallions
1 teaspoon toasted sesame oil

Steps:

  • Heat a large nonstick skillet or wok over high heat and then swirl in 1 tablespoon of the oil. When the oil begins to smoke, add the egg and swirl the skillet to make a flat egg pancake that's only half set, about 10 seconds; scoop out onto a plate.
