Number Of Ingredients 19

SHRIMP:
1 1/2 pounds medium shrimp with shells (26 to 30 shrimp)
4 cups water
2 teaspoons salt
1 1/2 cups dry white wine or nonalcoholic wine
2 tablespoons lime juice
5 black peppercorns
Handful of fresh cilantro
MARGARITA SAUCE:
1/2 cup orange juice
1/2 cup ketchup
1/4 cup chopped fresh cilantro
1/4 cup lime juice
1/4 cup lemon juice
2 tablespoons tequila, if desired
2 tablespoons vegetable oil
1/2 teaspoon salt
1/8 teaspoon freshly ground pepper
Dash of red pepper sauce

Steps:

  • Remove shells from shrimp, leaving tails intact. Set shells aside for the stock. Using a small, pointed knife or shrimp deveiner, make a shallow cut lengthwise down the back of each shrimp, then wash out the vein. In a 4-quart Dutch oven, heat shrimp shells, 4 cups water and 2 teaspoons salt to boiling over high heat. Add wine, 2 tablespoons lime juice, the peppercorns and handful of cilantro. Reduce heat to medium. Cover and cook 30 minutes. Strain stock through a strainer into a large bowl and discard shells, peppercorns and cilantro. Return stock to same pan and heat to boiling over high heat. Add shrimp; remove pan from heat. Cover and let stand 8 to 10 minutes until shrimp are pink and firm. Meanwhile, fill large bowl half full with ice and water. Strain stock through strainer and plunge shrimp into ice bath. Shrimp can be refrigerated in ice water for several hours. In medium bowl, mix all sauce ingredients. (Don't use aluminum bowl because the acid in the sauce may react.) Stir in cooked shrimp to coat. Cover and refrigerate at least 30 minutes but no longer than 3 hours. Serve cold.

SHRIMP COCKTAIL MARGARITAS

SHRIMP COCKTAIL MARGARITAS image

Categories     Shellfish     Appetizer     Poach     Cocktail Party

Yield 6 Cocktails

Number Of Ingredients 22

36 jumbo shrimp, peeled and
deveined
Crab Boil
2 tablespoons tomatoes,
seede and diced
2 tablespoons cilantro,
chopped
3 tablespoons green olives,
chopped
1/4 teaspoon jalapeno pepper,
minced
1/2 cup prepared quality salsa
The next 5 ingredients are to
your taste, the measurements
are just suggestions.
2 tablespoons each fresh ornage, fresh lime juice, and
Tequila
1/4 teaspoon Worcestershire
!/4 teaspoon Tabasco
For garnish I like to use thick slices of avocado, lime
wedges, and cilantro leaves.
Have Magarita glasses chilling.

Steps:

  • Cook the shrimp in simmering water with a pouch of Crab Boil until they turn a pale coral color. If they start to curl up, they're overcooked. Shock the shrimp with ice to stop them from cooking and chill in the refrigerator. In a large bowl, combine the tomato, cilantro, olives and jalapeno. In a medium bowl, blend the salsa, juices, the Tequila, Worcestershire and Tabasco sauces. Stir in the tomato mixture. Chill this mixture before assembling the cocktails. Just before serving, cut the avocado into thick slices and splash some limes juice on them so they don't brown. Cut the limes into wedges and gather the cilantro garnish. Place an avocado slice in the chilled glass and spoon the cocktail sauce next, leaving part of the avocado exposed. Place a lime wedge on each glass and line the shrimp around the rims. It's okay to dip them into the sauce slightly to give them anchorage. Garnish with the cilantro leaves.

MARGARITA SHRIMP COCKTAIL

Margarita Shrimp Cocktail image

Wow... this is amazing! It's a cross between a shrimp cocktail and Mexican salsa. We were a little unsure of the mango and avocado pairing but it was fabulous. The shrimp soak up the flavors from the horseradish, onions, and jalapeno. This will be great to bring to a party or to have for a snack on a relaxing evening home.

Provided by Helene Mulvihill @WeBakeinTX

Categories     Seafood Appetizers

Number Of Ingredients 14

2 jar(s) jars of salsa (16 oz each)
2 tablespoon(s) hot sauce
2 to 4 tablespoon(s) prepared horseradish to taste (we actually like 6 to 8)
1/4 cup(s) chopped jalapenos (from a jar)
1 - good sized fist-full of cilantro, chopped
1/4 teaspoon(s) black pepper
pinch(es) salt
1/2 cup(s) diced red onion
3 medium roma tomatoes, diced
1 large peeled and chopped mango
1/2 pound(s) frozen popcorn sized shrimp, peeled and deviened
1 or 2 large avocados, chopped
4 tablespoon(s) lime juice
- tortilla chips

Steps:

  • Mix first 7 ingredients in a medium sized bowl.
  • Toss in tomatoes, onions, mango, and shrimp.
  • Chop avocado and toss with lime juice. Leave to soak for 3 to 5 minutes. This will slow down the browning process of the avocado.
  • Add avocado lime juice to mixture and toss.
  • Serve with tortilla chips.
  • **NOTE** For a very impressive presentation, I like to serve this in a margarita glass placed on top of a dessert sized plate with some of the avocado mixed in and some sprinkled on top. A lime wedge on the edge of the glass and tortilla chips around the plate. Makes a great appetizer for a dinner party or a great dip for a big party!

SHRIMP MARGARITA

Time 20m

Yield 4 servings

Number Of Ingredients 9

1 pound (about 20) medium-size shrimp
1/4 cup fresh lime juice
Salt and freshly ground pepper to taste
1 small ripe avocado
2 tablespoons butter
1 tablespoon finely chopped shallots
1/4 cup tequila
3/4 cup half-and-half
1 tablespoon finely chopped cilantro or Chinese parsley (optional)

Steps:

  • Shell and devein shrimp. Butterfly shrimp by splitting them partly down the back, starting at the head and stopping short of the tail. Flatten them lightly. Place shrimp in a bowl and add lime juice, salt and pepper. Let stand briefly until ready to cook.
  • Peel the avocado, and cut it into half-inch slices. Discard pit. Use as soon as possible or the flesh will discolor.
  • Heat butter in a skillet; when it is quite hot but not smoking add shrimp, stirring rapidly. Cook about two minutes. Sprinkle with shallots and cook, stirring, about 10 seconds. Carefully add the tequila, which may flare up. Add half-and-half and cook over high heat about 1 minute. Add salt and pepper to taste. Add avocado, and cook just until the slices are piping hot.
  • Using a slotted spoon, transfer the shrimp and avocado pieces to hot serving dishes. Bring the sauce to a full rolling boil for about 1 1/2 minutes and add the chopped cilantro. Spoon the sauce over the shrimp and avocado. Serve with rice.
