Steps:

  • In a large bowl, toss shrimp with 2 tablespoons cilantro, 1 tablespoon oil and spices; let stand 10 minutes. Meanwhile, in a small bowl, mix sour cream and remaining cilantro., In a large nonstick skillet coated with cooking spray, heat 1 teaspoon oil over medium-high heat. 1 1/4 lbs medium shrimp, peeled and deveined
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon pure chile powder
1/2 teaspoon chopped oregano
1/4 teaspoon garlic powder
1 lime, juice of
8 -12 flour tortillas or 8 -12 soft corn tortillas, warmed
2 tablespoons vegetable oil
6 green onions, cut into thirds
2 green bell peppers, cut into 1/3 inch strips

Steps:

  • Add shrimp, salt, cumin, chile powder, oregano, garlic, lime juice to a large bowl or heavy duty zip-top plastic bag.

Juice of 1 lime (about 2 tablespoons)
3 cloves garlic
1 teaspoon kosher salt
1 teaspoon ground black pepper

1 tablespoon Ancho chili powder
1 tablespoon soy sauce
1 tablespoon olive oil
1 tablespoon Cholula Chipotle Hot Sauce
The Shrimp
1 pound jumbo shrimp, peeled and deveined
1 tablespoon achiote oil
1 tablespoon Cholula Chipotle Hot Sauce
The Veggies
3 large bell peppers (assorted colors are pretty) cut into strips
1 medium onion, chopped
3 gloves garlic, crushed and chopped
3 scallions, roughly chopped

Steps:

  • Put the garlic cloves and salt in a food processor and pulse until the garlic is minced. Add the lime juice, pepper, cumin, chili powder, soy sauce, olive oil, and hot sauce and give everything a whirl until it is well-combined. Pour half of the marinade over the chicken, toss to coat, and stash in the fridge for at least an hour, but not longer than 4 hours. Reserve the other half of the marinade in the fridge for later. Pour the oil and hot sauce over the shrimp and toss to coat. Stash in the fridge while you prep the veggies. The Cook Think of the griddle as a flat wok - you want to get it hot and move the food on and off it quickly. So have all of your ingredients, and a large (pre-warmed if possible) serving platter arranged in front of you before you start. Center the griddle over your largest/hottest burner on the stove (or across 2 burners if you have a large rectangular griddle) and heat over medium-high heat for about 5 minutes. Swirl a couple of glugs of peanut oil on the griddle and let heat until it starts to shimmer (about 2 minutes). Use a slotted spoon to remove the chicken from the marinade and arrange it on the griddle. Let the chicken sear for about 2 minutes and then flip it over and let it cook for another minute or so until done (I like using a set of tongs for this). Remove the chicken to the platter and put the veggies on the griddle. Cook these until they soften and start to char a bit, about 5 minutes (or until your smoke alarm goes off like ours did). Pour just a couple of tablespoons of water on the griddle to de-glaze it and steam the veggies a bit. Use a spatula here to scrape up the brown bits and work them into the veggies. Remove the veggies to the platter and add the shrimp to the griddle. Cook these just until they turn pink and start to curl (about a minute), flip and cook the other side for another minute. Remove the shrimp to the platter and drizzle the whole thing with the reserved marinade. Serve with warm tortillas and guacamole.

3/4-1 lb steak or 3/4-1 lb shrimp, cut in strips against grain
oil (enough to coat meat)
1 (5 g) packet Sazon Goya seasoning
1 1/2 teaspoons salt
2 -3 teaspoons paprika

1 -2 tablespoon black pepper
1/4-1/2 teaspoon cayenne pepper

1/4 cup fresh lime juice
Salt and pepper

1 tablespoon adobo sauce from canned chipotles in adobo
1/4 cup plus 3 tablespoons extra-virgin olive oil
4 large garlic cloves, minced
1 1/2 pounds medium or large shrimp, shelled and deveined
1 large red or yellow onion, halved and sliced
1 red bell pepper, seeded and sliced 1/4-inch thick
1 jalapeño or 2 serrano chiles, minced
1 large zucchini, halved lengthwise and sliced
1 cup fresh or frozen corn kernels (from 1 large ear of corn)
1/4 cup chopped cilantro
1 romaine heart, sliced crosswise
4 large flour or 8 corn tortillas

Steps:

  • In a small bowl, combine lime zest and juice, 1/2 teaspoon salt, 1 teaspoon ground cumin, the adobo sauce, 1/4 cup olive oil and half the garlic. Reserve 2 tablespoons marinade.
  • Season shrimp with salt and pepper and place in a resealable bag. Pour in marinade and seal bag. Move shrimp around to coat well, place bag in a bowl and refrigerate for 30 minutes. Flip bag over periodically to redistribute marinade.
  • Heat a large, heavy skillet over medium-high heat and add 2 tablespoons oil. When oil is hot, add onions and cook, stirring often, until they soften and begin to color, 3 to 4 minutes. Stir in bell pepper and chile and cook, stirring often, until peppers begin to soften, 3 to 4 minutes.
  • Stir in zucchini and corn, and turn heat to medium. Add remaining garlic, cumin and salt to taste. Cook, stirring often, until the zucchini is tender and peppers are nicely seared, softened and beginning to caramelize, 5 to 8 minutes.
  • Pour in reserved 2 tablespoons marinade and scrape bottom of pan with wooden spoon to deglaze. Stir in half the cilantro. Taste and adjust seasoning. Remove from heat but keep warm.
  • Wrap tortillas in foil and warm in the oven, or wrap in a towel and warm in a steamer or in the microwave.
  • Transfer shrimp, with marinade, to a bowl. Remove shrimp from marinade and blot briefly on paper towels. Reserve marinade.
  • Arrange lettuce on a platter. Heat remaining 1 tablespoon oil over medium-high heat in a large, heavy skillet, preferably cast-iron, or a wok. Add shrimp and let sear; when they begin to turn pink, after about 1 minute, add drained marinade. Cook, stirring, until cooked through, 3 to 4 minutes. Using tongs, transfer shrimp from pan to platter. Turn up heat, reduce liquid in pan by half, and pour over shrimp.
  • Arrange vegetables on platter with shrimp, or serve separately. Sprinkle with remaining cilantro and serve, with warm tortillas, salsa and crumbled queso fresco.

  • Combine all seasonings and mix well.
  • Take out 1 tbsp for later use.

This is a recipe I made up for a quick weeknight meal. Over time, it evolved into something I'm proud enough to share with you all. Please do not use a non-stick pan. You could try substituting the shrimp for chicken or fish and the pineapple or mango salsa for your favorite variety. Like most Caribbean recipes I like the combination of hot, sweet, savory, and sour in one dish. Enjoy!

1 lb shrimp, medium, raw, peeled
2 limes, juice of
3 garlic cloves, minced
3 tablespoons jerk seasoning (more or less, depending on taste)
2 tablespoons regular olive oil (not extra virgin)
1 green bell pepper
1 red bell pepper
1 onion
1 glass wine or 1 glass water, on hand for deglazing the pan if needed
1/4 cup sour cream
1 dash cayenne pepper
2 tablespoons milk
1/4 cup mango salsa or 1/4 cup pineapple salsa
3 sprigs cilantro
6 large tortillas (burrito size)

Steps:

  • 1. Combine the shrimp, lime juice, garlic, Jerk Seasoning, and 1 T of the olive oil in a small bowl or ziploc bag to marinate.
  • 2. Meanwhile, heat the other 1 T olive oil in a large saute pan over medium-high heat.
  • 3. Slice the green and red bell peppers and add them to the hot pan.
  • 4. Slice the onion and add it to the pan. Stir occasionally.
  • 5. As the vegetables are cooking, prepare the condiments as follows:.
  • 6. Mix the sour cream, cayenne pepper, and milk together in a small bowl.
  • 7. Chop the cilantro.
  • 8. Open the jar of salsa and put a spoon in it. :-).
  • 9. When the vegetables are nicely browned and a nice fond has developed on the pan, add the shrimp mixture and scrape the pan to deglaze, stirring frequently. Use your beer, wine, or water to add moisture to the pan only if needed. (Otherwise it will get too runny, ick).
  • 10. While shrimp is cooking, cover the tortillas with damp paper towels on a plate and microwave for 1 minute.
  • 11. When the shrimp are opaque and the liquid is mostly absorbed, remove from heat.
  • 12. Scoop fajita filling onto warm tortillas and top with sour cream mixture, salsa, and cilantro. Wrap, burrito style and serve.
