1 (16 ounce) package linguine pasta
2 tablespoons butter
2 tablespoons extra-virgin olive oil
2 shallots, finely diced
2 cloves garlic, minced
1 pinch red pepper flakes
1 pound shrimp, peeled and deveined
1 pinch kosher salt and freshly ground pepper
½ cup dry white wine
1 lemon, juiced
2 tablespoons butter
2 tablespoons extra-virgin olive oil
¼ cup finely chopped fresh parsley leaves
1 teaspoon extra-virgin olive oil, or to taste

Steps:

  • Bring a large pot of salted water to a boil; cook linguine in boiling water until nearly tender, 6 to 8 minutes. Drain.
  • Melt 2 tablespoons butter with 2 tablespoons olive oil in a large skillet over medium heat. Cook and stir shallots, garlic, and red pepper flakes in the hot butter and oil until shallots are translucent, 3 to 4 minutes. Season shrimp with kosher salt and black pepper; add to the skillet and cook until pink, stirring occasionally, 2 to 3 minutes. Remove shrimp from skillet and keep warm.
  • Pour white wine and lemon juice into skillet and bring to a boil while scraping the browned bits of food off of the bottom of the skillet with a wooden spoon. Melt 2 tablespoons butter in skillet, stir 2 tablespoons olive oil into butter mixture, and bring to a simmer. Toss linguine, shrimp, and parsley in the butter mixture until coated; season with salt and black pepper. Drizzle with 1 teaspoon olive oil to serve.

¾ pound Roma (plum) tomatoes, halved lengthwise
1 (16 ounce) package angel hair pasta

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Prepare a baking sheet with cooking spray.
  • Arrange tomato halves onto prepared baking sheet. Drizzle olive oil over the tomatoes; season with salt and pepper.
  • Roast tomatoes in preheated oven until edges are crisp, about 35 minutes. Transfer to a cutting board to cool; cut into small chunks.
  • Bring a large pot of lightly salted water to a boil. Cook angel hair in the boiling water, stirring occasionally until cooked through but firm to the bite, 4 to 5 minutes; drain. Transfer to a large bowl.
  • Melt butter in a skillet over low heat. Cook and stir onion, garlic, and half the basil in the hot butter until the onion is translucent, about 5 minutes.
  • Stir shrimp, tomato chunks, mushrooms, and garlic powder into the onion mixture. Increase heat to medium-low and cook and stir until shrimp are bright pink on the outside and the meat is no longer transparent in the center, about 6 minutes.

1 pound dry pasta (I'm using spaghetti)
1/4 cup olive oil
1 stick (8 tablespoons) unsalted butter
12 cloves garlic, sliced
2 pounds shrimp, peeled and deveined
1 cup liquid (I'm using white wine)
2 lemons, juiced
2 tablespoons chile flakes, optional
2 tablespoons chopped fresh parsley, optional

Steps:

  • Bring a pot of water to a boil and add 2 tablespoons salt . Add the spaghetti, give it a stir and cook until al dente according to the package instructions.
  • Meanwhile, heat a large saute pan over medium heat. Add the oil, butter, garlic and a pinch of salt and sweat the garlic for 2 minutes. Add the shrimp, season with salt and pepper and cook, stirring, 1 minute. Add the wine, lemon juice and chile flakes if using and cook until the shrimp are just cooked through, 3 to 5 minutes.
  • Reserve some of the pasta water, then drain the spaghetti. Add the spaghetti and a little of the reserved pasta water to the pan with the shrimp and toss to combine. Toss in the parsley if using and serve.

You don't have to serve garlic bread with the dish, but there's nothing better for sopping up all that delicious buttery sauce.

6 cloves garlic, chopped
3/4 cup dry white wine
Juice and zest of 1 lemon

12 ounces thin spaghetti, broken in half
1 1/2 pounds frozen peeled and deveined shrimp

  • Add the butter, olive oil and garlic to a 6- or 8-quart Instant Pot® multi-cooker and set to high saute (see Cook's Note). Cook, stirring often, until the garlic is softened but not browned, about 3 minutes. Add the wine, lemon juice and zest, red pepper flakes, 2 teaspoons salt and several grinds of pepper. Bring to a boil and let simmer 1 minute. Add 2 cups water, then add half of the pasta all in one direction and then the other half of the pasta in a criss-cross fashion. 4 slices bacon, chopped
2 cloves garlic, minced
12 ounces jumbo shrimp, peeled and deveined

½ cup chicken broth
½ cup heavy cream
⅓ cup freshly grated Parmesan cheese
salt and ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until nearly tender, about 8 minutes.

I make this with a decent bottle of Sauvignon Blanc because the acidity in the wine pairs well with the lemon juice and the fresh cut grass-like aromas of the asparagus. Chill the rest of the bottle and have it with your meal! Remember to always use a wine that you enjoy the flavor of by itself if you're going to cook with it because the food takes on the flavor of the wine.

2 tablespoons butter, cut into small pieces
1 large shallot, finely chopped
1 lemon, zested
1/3 pound baby shrimp, 300 count
1/4 cup dry vermouth or white wine, eyeball it
1/2 cup grape tomatoes
1/3 pound angel hair pasta, cooked to al dente

Steps:

  • Get your pasta water going. Start the scampi sauce when you drop your pasta into boiling water to cook.
  • Heat a large skillet over medium high heat. Add extra-virgin olive oil and melt the butter into it. Add shallots and cook a minute or 2, stirring constantly. 2 cups panko breadcrumbs
2 tablespoons finely chopped chives
2 teaspoons finely chopped oregano
1/2 teaspoon lemon zest
2 tablespoons extra-virgin olive oil
2 pounds large shrimp (16-20 count), peeled and deveined
Kosher salt and freshly ground black pepper
12 cloves garlic, finely chopped
1 shallot, finely chopped
1 cup dry white wine
1/4 cup freshly squeezed lemon juice (from 1 to 1 1/2 lemons)
Pinch red pepper flakes
Pinch dried oregano
4 tablespoons (1/2 stick) unsalted butter, cut up
3/4 cup loosely packed fresh flat-leaf parsley, chopped
12 ounces capellini

Steps:

  • Bring a 6- to 8-quart soup pot of generously salted water to a boil.
  • For the topping: In a large stainless steel skillet, heat the butter over medium heat until melted and slightly browned but not burned. Add the breadcrumbs. Using a wooden spoon, stir the breadcrumbs to coat with the brown butter, and toast until golden brown, 2 to 3 minutes. Remove from the heat. Stir in the chives, oregano and lemon zest. Season to taste and set aside.
  • For the pasta: Meanwhile, heat the oil in a large saute pan over high heat until shimmering. Season the shrimp all over with salt and pepper. Add the shrimp to the pan in one layer and cook for 1 minute. Turn and cook 1 more minute. Using a slotted spoon, transfer the shrimp to a bowl.
  • Add the garlic and shallot to the pan and cook for 1 minute. Add the wine, lemon juice, pepper flakes and oregano and simmer for 3 minutes. Whisk in the butter piece by piece, thoroughly incorporating each piece before adding the next. Taste and season with additional salt and pepper as needed. Add the shrimp back to the pan and simmer until completely cooked through, about 2 minutes. Stir in the parsley. Remove the skillet from the heat.
  • Add the capellini to the boiling water and cook until just tender, about 4 minutes. Reserve 1 cup of the cooking water and transfer the capellini to a colander to drain. Toss the capellini with the shrimp and parsley, adding some of the pasta water if necessary to keep it moist. Transfer to a large serving bowl or into small bowls as individual servings.
  • Top with herb breadcrumbs.

1 yellow squash
1 zucchini
1 pound peeled and deveined medium shrimp, tails removed

1/2 cup low-sodium vegetable or chicken broth

Steps:

  • Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions for al dente.
  • While the pasta cooks, trim the top and bottom off of each squash. Peel the squash in ribbons into a colander, using a vegetable peeler, turning the squash as you peel. Stop peeling the squash when you only have the center core of seeds left. Discard the core and seeds.
  • Reserve 1/4 cup of the pasta water, and then drain the pasta over the squash ribbons. Put in a medium bowl and toss to evenly distribute the pasta with the squash ribbons.
  • Toss the shrimp with 1/2 teaspoon kosher salt and some pepper. Heat 1 tablespoon oil in a large skillet over medium-high heat. Add the shrimp, spread into a single layer and cook without stirring, until just turning pink around the edges, about 2 minutes. Stir the shrimp, add the tomatoes, garlic and pepper flakes and continue to cook until the tomatoes have softened and the garlic has toasted, about 1 minute. Add the pasta and squash ribbons, broth and the remaining 1 tablespoon olive oil. Cook, tossing, until warmed through and most of the liquid has been absorbed. Add the pasta water a bit at a time, if needed, if the noodles seem dry.
  • Season with additional salt and pepper. Divide among 4 bowls and top with the chives.

8 ounces uncooked spaghetti
½ cup butter
2 cups dry white wine
2 pounds large shrimp, peeled and deveined
1 teaspoon dried basil

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a large saucepan, melt butter and add white wine. Over medium heat, add shrimp and basil. Cook until pink all over; about 3 to 5 minutes. Serve over pasta.

Ok...how about dinner in like...15 minutes. Don't forget the bag of salad (ya just gotta eat green things!) Now for my notes on this one -- I didn't have a microplane at the time so instead of the zest, I just squeezed juice from a fresh lemon. I didn't have white wine either, but I did have some sherry and that came out ok too! By the way, here's a rule of thumb when adding wines to food -- if you wouldn't drink it out of a glass, don't put it in your food! Finally, I added about a teaspoon of finely chopped garlic cuz Emeril says it's good for ya. Deeeeeeeeeeee-lish!!!

2 tablespoons extra virgin olive oil, 2 turns of the pan
2 tablespoons butter, cut into small pieces
1 large shallot, finely chopped
1 lemon, zest of
1/3 lb baby shrimp, 300 count
1/4 cup dry vermouth or 1/4 cup white wine, eyeball it
1/2 cup grape tomatoes
1/3 lb angel hair pasta, cooked to al dente
salt and pepper
2 tablespoons chopped fresh chives

Steps:

  • Get your pasta water going.
  • Start the scampi sauce when you drop your pasta into boiling water to cook.
  • Heat a large skillet over medium high heat.
  • Add extra-virgin olive oil and melt the
  • butter into it.
  • Add shallots and cook a minute or 2, stirring constantly.
  • Add lemon zest and shrimp and heat shrimp through, another minute or two.
  • Add vermouth or wine and tomatoes. Toss another minute to heat the tomatoes through.
  • Add cooked pasta to the pan and toss to coat evenly in sauce and to distribute the shrimp.
  • Season liberally with salt and pepper and serve with chives to garnish.

Steps:

  • Boiled the pasta for 8 min in boiling water ( add some salt on the water) Sauté the shrimps with the garlic and add the white wine. Add salt and white pepper, and add the cherry tomatoes. Sauté for a few minutes the all the ingredients include the tarragon, and when your shrimps are cooked (do not cook them more than 10 minutes) add the cream. Remove in another pot the shrimps and Add and your pasta and mix well inside the sauce.

1 lb peeled and deveined large shrimp (raw; 20 to 25 per lb)
4 large garlic cloves, left unpeeled and forced through a garlic press

1/2 cup dry white wine
1 teaspoon salt
1/2 teaspoon black pepper
5 tablespoons unsalted butter
3/4 lb capellini (angel-hair pasta)
1/2 cup chopped fresh flat-leaf parsley

Steps:

  • Bring a 6- to 8-quart pot of salted water to a boil.
  • Meanwhile, heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then sauté shrimp, turning over once, until just cooked through, about 2 minutes, and transfer with a slotted spoon to a large bowl. Add garlic to oil remaining in skillet along with red pepper flakes, wine, salt, and pepper and cook over high heat, stirring occasionally, 1 minute. 2 green onions, chopped
2 tablespoons fresh minced garlic (or to taste)

1/2 cup fresh lemon juice (can reduce to 1/3 cup for a less lemony flavor)
salt (to taste, I use seasoned salt)
black pepper (lots!)
2 lbs large raw shrimp, peeled and deveined

12 ounces angel hair pasta, cooked
parmesan cheese

Steps:

  • Melt butter in a large skillet over medium heat.

6 clove garlic, pressed or grated
2 lemon, zested and juiced
5 tbsp olive oil
1 tsp red pepper flakes
1 kosher salt
3⁄4 lb medium shrimp , (21 to 25) peeled, deveined and butterflied (reserve shells)
1⁄4 onion
3⁄4 lb thin linguine pasta
2 tbsp butter
1 small bunch parsley, leaves chopped
1 black pepper, freshly ground

Steps:

  • In a bowl, combine the garlic, zest and juice of 1 lemon, olive oil, red pepper flakes, salt and pepper, to taste, and the shrimp. Set aside to marinate. Meanwhile make a quick shrimp stock: In a small pot, over medium heat, add the shrimp shells and onion. Cover with water and bring to a boil. Reduce the heat and simmer for 20 minutes. Strain into a bowl and discard the shells and the onion. Bring a large pot of water to a boil over high heat and add a generous amount of salt. Add the linguini and cook until just tender, 2 minutes less than instructed on the package. Drain and reserve 1/2 cup of cooking water. Heat a skillet over high heat. Remove the shrimp from the marinade, reserve the marinade, and add the shrimp to the skillet. Cook until they turn pink and start to caramelize, about 3 minutes. Remove the shrimp from the pan to a plate and add the reserved marinade. Let cook a few minutes then add about 1 cup of shrimp stock and about 1/2 cup pasta water. Continue to cook until sauce reduces by half. Add the zest and juice of the remaining lemon, the butter and the parsley and stir to combine. Adjust seasoning with salt and pepper, to taste. Add in the shrimp and pasta and toss to combine with the sauce. Turn out into a serving bowl and serve immediately.

Drain the pasta in a colander, and add it to the skillet along with the chopped parsley and toss. Add the lemon zest and adjust the seasonings with salt and pepper, to taste. Transfer to a serving platter and serve immediately.
