Time 30m

Number Of Ingredients 16

1 pound large or jumbo shrimp (peeled, deveined, and tails removed (fresh or frozen and thawed))
1 tablespoon extra-virgin olive oil (divided)
1 teaspoon chili powder
1 teaspoon ground chipotle chili
1 teaspoon ground cumin
1/2 teaspoon kosher salt
6 to 8 corn or flour tortillas
Garnishes: avocados (cilantro, sour cream (or Greek yogurt), lime wedges)
1 cup nonfat plain Greek yogurt
2 tablespoons extra-virgin olive oil
1 clove garlic (peeled)
1/2 small jalapeno (seeds and membranes removed)
1/4 cup tightly packed fresh cilantro leaves
1/4 teaspoon kosher salt
Zest and juice of 1 large or 2 very small limes (about 2 teaspoons zest and 3 tablespoons juice)
2 cups shredded cabbage ( or slaw mix)

Steps:

  • Rinse and pat the shrimp dry, then transfer to a large mixing bowl. Drizzle with 1/2 tablespoon olive oil and sprinkle with the chili powder, chipotle chili, cumin, and salt. Toss to coat evenly. Let rest while you prepare the shrimp taco sauce and slaw.
  • Prepare the sauce and slaw: In a food processor fitted with a steel blade, process the Greek yogurt, olive oil, garlic, jalapeno, cilantro, salt, lime zest, and lime juice. Taste and adjust seasonings as desired. Place the cabbage in a mixing bowl and toss with about 1/2 cup of the sauce. Add more sauce if you desire a creamier slaw, then reserve the rest of the sauce for serving.
  • Cook the shrimp: In a large nonstick skillet over medium high, heat the remaining 1/2 tablespoon olive oil. Add the shrimp and sauté just until the shrimp is cooked through and no longer translucent in the center, about 4 minutes. Do not overcook! Transfer the shrimp immediately to a plate.
  • Warm the tortillas (optional) and assemble the tacos: If you like, warm the tortillas in the microwave (put them in a stack and cover them with a lightly damp towel) or a 250 degree F oven while the shrimp cook. To serve, fill the tortillas with your desired number of shrimp, then top generously with the slaw, extra sauce, a squeeze of lime juice, and any other desired toppings. Enjoy immediately.

Time 35m

Yield 8 Mini Tacos, 4 serving(s)

Number Of Ingredients 16

1/4 cup oil
1/4 cup water
1/2 cup chopped green onion
1/2 cup cilantro leaf
2 -3 garlic cloves (less if you're sensitive to garlicky things)
1/2 teaspoon salt
2 limes, juice of
1/2 cup sour cream
1 lb shrimp, peeled and deveined, tails removed
1 teaspoon chili powder, cumin, and southwestern seasoning
1/4 teaspoon cayenne pepper (more or less to taste)
2 -3 cups shredded green cabbage
8 small corn tortillas
1 -2 avocado
1 cup Cotija cheese, and additional cilantro for topping
8 lime wedges, for serving

Steps:

  • Pulse all the sauce ingredients except the sour cream in a food processor. When mostly smooth, add the sour cream and pulse until combined. Taste and adjust as needed. Set aside.
  • Heat a drizzle of oil a large skillet over medium high heat. Pat the shrimp dry with paper towels and sprinkle with the spices. Add the shrimp to the hot pan and saute for 5-8 minutes, flipping occasionally, until the shrimp are cooked through.
  • Toss some of the sauce (not all) with the cabbage until it the cabbage is coated to your liking. It should resemble a coleslaw - you want it to be enough sauce so the cabbage is weighed down a little bit. Use leftover sauce on top of the tacos or in other recipes.
  • To serve tacos, smash a spoonful of avocado on the tortillas, top with a few pieces of shrimp, top with coleslaw, and finish with Cotjia cheese, cilantro, and lime wedges.

Tips:

  • Use fresh shrimp. Thaw frozen shrimp properly before cooking to ensure the best flavor and texture.
  • Cook the shrimp properly. Overcooked shrimp will be tough and rubbery. Cook them for just a few minutes, until they are pink and opaque.
  • Make the citrus cabbage slaw ahead of time. This will allow the flavors to meld and develop.
  • Use a variety of toppings. This will add flavor and texture to your shrimp tacos. Some good options include avocado, salsa, sour cream, and cilantro.
  • Serve the shrimp tacos immediately. This will ensure that the shrimp are hot and crispy and the slaw is fresh and crunchy.

Conclusion:

Shrimp tacos are a delicious and easy-to-make meal that is perfect for any occasion. They are packed with flavor and can be customized to your liking. So next time you are looking for a quick and easy meal, give shrimp tacos a try. You won't be disappointed!
