Time 10m

Yield 6 servings

Number Of Ingredients 8

1 1/2 pounds baby spinach leaves
2 tablespoons good olive oil
2 tablespoons chopped garlic (6 cloves)
2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
1 tablespoon unsalted butter
Lemon
Sea or kosher salt, optional

Steps:

  • Rinse the spinach well in cold water to make sure it's very clean. Spin it dry in a salad spinner, leaving just a little water clinging to the leaves.
  • In a very large pot or Dutch oven, heat the olive oil and saute the garlic over medium heat for about 1 minute, but not until it's browned. Add all the spinach, the salt, and pepper to the pot, toss it with the garlic and oil, cover the pot, and cook it for 2 minutes. Uncover the pot, turn the heat on high, and cook the spinach for another minute, stirring with a wooden spoon, until all the spinach is wilted. Using a slotted spoon, lift the spinach to a serving bowl and top with the butter, a squeeze of lemon, and a sprinkling of sea or kosher salt. Serve hot.

Tips for Making Sicilian Spinach Sauté:

  • Choose fresh, tender spinach: Wilted or yellowed spinach will not taste as good and will not cook evenly.
  • Wash the spinach thoroughly: Grit and dirt can be hidden in the spinach leaves, so be sure to rinse them well before cooking.
  • Use a large skillet or sauté pan: This will allow the spinach to cook evenly and prevent it from crowding.
  • Heat the olive oil over medium heat: If the oil is too hot, the spinach will burn.
  • Add the garlic and cook until fragrant: This will infuse the oil with flavor.
  • Add the spinach and cook until wilted: Stir the spinach constantly so that it cooks evenly.
  • Season with salt, pepper, and red pepper flakes to taste: You can also add other seasonings, such as garlic powder, onion powder, or dried oregano.
  • Serve immediately: Sicilian spinach sauté is best enjoyed fresh out of the pan.

Conclusion:

Sicilian spinach sauté is a simple but delicious dish that is perfect for a quick and easy weeknight meal. It is also a great way to get your daily dose of vegetables. With its bright green color and garlicky flavor, this dish is sure to please everyone at the table. So next time you're looking for a healthy and satisfying side dish, give Sicilian spinach sauté a try. You won't be disappointed!
