1 pound lean ground turkey
3 tablespoons tomato paste
3 tablespoons currants
2 tablespoons capers
1/2 teaspoon dried basil
1/2 teaspoon crushed fennel seeds
1/2 teaspoon salt
Vegetable oil cooking spray
1/2 cup grated Parmesan
4 ciabatta rolls, split
4 teaspoons balsamic vinegar
Sliced tomato (optional)

Steps:

  • In a bowl, mix turkey, tomato paste, currants, capers, basil, fennel seeds and salt. Form turkey mixture into four 3/4-inch-thick patties. Coat a grill rack or grill pan with cooking spray. Grill patties over medium-high heat until underside is well browned, about 7 minutes; flip and cook 5 minutes more. Top each patty with 2 tablespoons Parmesan; close lid or cover pan. Cook until internal temperature reaches 165°F, about 2 minutes. Brush bottom of each roll with 1 teaspoon vinegar; top with 1 burger, tomato, if desired, and other half of roll.

1/3 cup crumbled feta cheese (about 2 ounces)
1 Persian or Kirby cucumber, grated
2 tablespoons chopped fresh mint
2 cloves garlic, grated

1 1/4 pounds lean ground turkey
2 tablespoons extra-virgin olive oil
4 sesame hamburger buns or potato rolls, split and toasted

Steps:

  • Combine the yogurt, feta, cucumber, mint, half of the garlic, 1 tablespoon water, 1/2 teaspoon salt and a few grinds of pepper in a small bowl. Refrigerate until ready to serve.
  • Combine the turkey, the remaining garlic, 1 teaspoon salt and a few grinds of pepper in a medium bowl. Form into four 1/2-inch-thick patties. Heat a large nonstick skillet over medium-high heat. Add the olive oil, then add the patties and cook until browned and cooked through, 4 to 5 minutes per side. Transfer to a plate.
  • Spread the yogurt sauce on the buns. Sandwich with the burgers; top with lettuce and tomato. Serve with potato chips.

1 clove garlic, finely chopped
8 ounces ground turkey
12 ounces sweet Italian turkey sausage, removed from casings
2 teaspoons extra-virgin olive oil
8 thin slices pancetta
4 ounces sliced Italian fontina cheese
Four 3-by-3-by-1/2-inch squares focaccia, split and lightly toasted
1 plum tomato, sliced
1 cup baby arugula

Steps:

  • Mix the mayonnaise with the garlic in a small bowl and set aside. Using your hands, mix together the turkey and turkey sausage in a large bowl until just combined. Form this mixture into four 1-inch-thick patties.
  • Preheat a large skillet over medium heat. Add the olive oil and pancetta slices and cook the pancetta on both sides until crisp, about 3 minutes. Drain on paper towels and reserve.
  • Place the same skillet over medium-high heat and add the burgers. Cook, turning once, until cooked all the way through, about 5 minutes per side. Top with the fontina and cook until just melted.
  • To serve, place the burgers on the focaccia bottoms. Top with tomato slices, pancetta and arugula. Spread the focaccia tops with garlic mayonnaise, set on top of the burgers and serve.

An excellent way to use leftover turkey (or chicken). If you like your spice flavours to be stronger, then use 1/2 teaspoon amounts. Adapted from Australian chef Margaret Fulton's "Book of Slimming". Don't be put off by the title of the book! It was published in 1983 and, to me, really doesn't sound like a C21st title! This certainly does NOT taste like a dish for would-be-slimmers: there are too many delicious flavours for that! Think of it as more of a healthy, C21st low-BAD-fats recipe. Margaret Fulton was probably one of our first celebrity chefs. She and her recipes date back to at least the sixties and possibly earlier, certainly well before the term 'celebrity chef' was in such common usage!

30 g unsalted butter or 1 ounce unsalted butter
1 yellow onion, sliced
2 garlic cloves, chopped
100 g mushrooms or 100 g approximately 31/2 ounces mushrooms, sliced
1/4 cup plain flour
1/4 teaspoon ground ginger
1/4 teaspoon nutmeg, grated
2/3 cup white wine
2/3 cup low-fat milk
375 g cooked turkey or 12 ounces cooked turkey, chopped
salt & freshly ground black pepper, to taste
2 tablespoons sliced almonds, toasted

Steps:

  • Melt the butter in a large sauté pan which has a lid (preferably non-stick), add the onion and garlic and,stirring occasionally, sauté for 2 minutes, or until they are just beginning to soften but not brown.
  • Add the mushrooms and, stirring occasionally, sauté for another 2-3 minutes until they soften.
  • Add the flour, ginger and nutmeg, and stirring, cook for another minute.
  • Gradually blend in the wine and milk.
  • Bring to the boil, stirring, reduce the heat, add the turkey.
  • Add salt and freshly ground black pepper, to taste.
  • Cover and simmer for 20 minutes.
  • Transfer the mixture to a warm serving dish and sprinkle with toasted almonds.
  • Serve with noodles or rice and your favourite salad or vegetable side dish.
  • Chef's Note: Using a non-stick pan, you may find that you can reduce the butter slightly.

⅓ cup chopped fresh basil
3 cloves garlic, crushed, or more to taste
2 teaspoons salt

4 slices provolone cheese
4 ciabatta rolls
¼ cup mayonnaise
⅛ cup prepared pesto
½ red onion, sliced
4 leaves romaine lettuce

Steps:

  • Combine turkey, basil, garlic, salt, and pepper in a bowl. Divide into 4 equal portions and form into hamburger patties.

1 cup chopped onion
1-1/4 cups ketchup
1/4 cup dill pickle relish
1/2 teaspoon salt

1 tablespoon olive oil
1 medium onion, finely chopped
1 medium green bell pepper, finely chopped
2 cloves garlic, minced
1 cup salsa
1 (15.25 ounce) can whole kernel corn, drained
1 pound ground turkey
1 (1.25 ounce) package taco seasoning mix
⅓ cup dry bread crumbs
6 (10 inch) flour tortillas
6 tablespoons sour cream
2 cups shredded lettuce

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Coat a medium baking dish with cooking spray.
  • Heat the olive oil in a skillet over medium heat, and saute the onion, green pepper, and garlic 5 minutes. Remove from heat, and cool slightly.
  • In a small bowl, mix the salsa and 1/2 the corn. In a large bowl, mix the onion mixture with the turkey, taco seasoning, and 2 tablespoons of the salsa mixture. Divide into 6 patties, and press into the breadcrumbs to lightly coat on all sides. Arrange coated patties in the prepared baking dish.
  • Bake the patties 10 minutes in the preheated oven. Drain any liquid from the dish, turn patties, and spread with the remaining salsa mixture. Continue baking 10 minutes, to an internal temperature of 165 degrees F (75 degrees C).
  • Warm the tortillas in the microwave, about 30 seconds on High. Wrap the cooked turkey patties in the warmed tortillas with sour cream and lettuce. Sprinkle with remaining corn to serve.
