2 slices sourdough bread, cubed
2 tablespoons grapeseed oil
Kosher salt and freshly ground black pepper
1/2 romaine lettuce heart

  • Preheat the oven to 350 degrees F.
  • Lay out the bacon on a small pan and bake until crispy, about 15 minutes.
  • Toss the sourdough cubes with the grapeseed oil and some salt and pepper. Transfer to a baking sheet; bake until crispy, 5 to 10 minutes.
  • Split the romaine heart and remove the core. Wash, dry and lay on a plate. Season with salt and pepper.

1 cos lettuce
1 small baguette (to make croutons)
2 anchovy fillets
1 garlic clove (minced or put through a garlic press to crush)
15 g butter
1 lemon (juice of)
1/3 cup olive oil
1 teaspoon Worcestershire sauce (Lea & Perrins recommonded)
salt (to taste)
pepper (freshly ground to taste)
1/4 cup parmesan cheese (grated or shaved)
1 coddled egg (see below)

Steps:

  • Remove tough outer leaves of the lettuce.
  • Wash the tender leaves, sprin dry (or dry in a large clean tea towel) and place in a plastic bag and put in the refrigerator to crisp.
  • To make croutons -.
  • Preheat oven to 180°C.
  • Cut baguette into thick slices.
  • Mash the anchovy fillets and garlic with the butter and spread over the bread slices.
  • Place on a baking tray and bake until pale and gold and crisp.
  • For the Dressing -.
  • With the exception of the egg mix/whisk or put in a jar, seal and shake, all the ingredients together to make the dressing.
  • Coddled egg -.
  • Lower the egg into a small saucepan of simmering water and simmer for 1 minute, lift out with a slotted spoon.
  • Arrange the crisp lettuce leaves in a bowl.
  • Add the croutons and break in the coddled egg and add the dressing and turn the salad gently, until the dressing coats the lettuce leaves evenly.
  • Serve as soon as possible after dressing (better immediately) - keeps o'kay but not the best. (haven't done myself but from family members that have).

½ lemon, juiced

4 to 6 Heads Romaine Lettuce
2 Egg Yolks
2 tablespoons Dijon Mustard
3 large Anchovies, optional
3 to 4 Garlic cloves
1 tablespoon Worcestershire Sauce
1 ¼ cup Eureka Lemon Olive Oil or Extra Virgin Olive Oil
1 tablespoon White Balsamic Vinegar or a White Wine Vinegar
2 tablespoons fresh Lemon Juice
¼ teaspoon Salt
¼ teaspoon Black Pepper - freshly ground
1½ cup Croutons
¾ cup fresh Parmigiano Reggiano Cheese - freshly grated
1 loaf of Country Bread
2 tablespoons Garlic Olive Oil
2 tablespoons Garlic, minced
2 tablespoons Parsley, chopped

Steps:

  • You will need approximately 1 head of romaine per person, since you should use only the inner leaves (they are more tender and crisp). Wash the romaine and dry thoroughly with a salad spinner (or paper towels). The leaves should be extremely dry.
  • On your cutting board puree the garlic and anchovies until you have a very fine paste.Add that paste in a glass bowl, with the mustard and the egg yolks mix well and very slowly add the olive oil to create an emulsion. When your dressing is nice and thick like the consistency of a mayonnaise add the remaining ingredients, except the romaine, croutons and the cheese. You may want to remove some of the dressing before you add the lettuce just in case you have too much dressing depending on how much romaine you have.
  • Add the romaine and coat the leaves with the dressing (you may want to add ½ of it first to make sure you do not have too much dressing depending on how much romaine you have. Add the croutons and mix well. Add the cheese and mix well.
  • In your processor combine egg yolks, mustard, anchovies and garlic, and blend until it is a smooth paste. With the machine running, slowly add the oil. When the consistency is like a mayonnaise, add the lemon juice, Worcestershire sauce and vinegar, salt and pepper. Transfer dressing to a large salad bowl. You may want to add ½ of it first to make sure you do not have too much dressing depending on how much romaine you have.
  • Add the romaine and coat the leaves with the dressing. Add the croutons and mix well. Add the cheese and mix well.
  • Homemade croutons may seem like a bit of work, when it seems so easy to open a package from the store, but I promise you, once you've tasted them, you will never buy another box! The great flavor and texture of homemade croutons will surprise you. So give it a go! You won't be sorry.
  • Cut the bread into ½" cubes. In a large glass bowl add the olive oil and the parsley mix well and add the bread and mix well again. When croutons are well‑coated, transfer to a baking sheet in a single layer and bake until golden brown. 4 cups cubed French or white bread
1/2 cup olive oil
3 cloves garlic, crushed

3 or 4 heads fresh young romaine (1 1/2 to 2 pounds)

Steps:

  • For the dressing:
  • Place vinegar, egg yolks, lemon juice, Dijon, garlic, Worcestershire, hot red pepper sauce, and anchovy fillets in a blender with a lid attachment. Blend on high speed. Slowly incorporate the olive oil while blending. Add the Parmesan and pulse lightly. Season to taste with salt and pepper.
  • Preheat the oven to 325 degrees F.
  • Spread cubed bread out on a sheet pan and toast in the oven until they are crisp and an even pale brown. Remove the oil from the heat. Toss the croutons in the garlic oil and then in the grated Parmesan.
  • Wash and dry the romaine. Break small leaves into crosswise halves or thirds. Separate large leaves from their central rib and discard the tough rib. Tear the leaves into medium sized pieces.
  • In a large bowl, toss together the lettuce leaves and dressing. Add the grated Parmesan and the croutons. Finish the salad with fresh ground black pepper.

4 slices day-old bread, cut into 1-inch squares
9 cups torn salad greens
1 1/2 cups crumbled blue cheese
4 garlic cloves, finely minced
1/3 cup balsamic vinegar
2 tablespoons fresh lemon juice
1 1/2 tablespoons dijon-style mustard
1 1/2 tablespoons dried herbs, parsley, chives, tarragon, chervil. (I use about 1 tsp each)
1 cup olive oil

  • 1. Fry the bacon pieces in a medium-size skillet until crisp. Drain on paper towels and reserve the fat in the skillet.
