I know everyone says their mum's meatloaf is the best and I am one of those who agree--my mum's recipe is the best! This has been one of my favorites since my childhood. While I love it served fresh and hot, a good next-day meatloaf sandwich is also a comfort food. I serve it with a nice arugula salad with cherry tomatoes, raisins, chopped walnuts, and vinaigrette dressing, or for a southern flare--garlic-smashed potatoes and freshly steamed snap green beans. Just yummy deliciousness and mum is always right!

SUSAN'S SWEET AND TANGY MEATLOAF

Susan's Sweet and Tangy Meatloaf image

I snagged the basic recipe for this from AllRecipes.com but have changed it a great deal to suit my family's tastes. My husband is not a fan of meatloaf but BEGS for this one, as do my 2 and 4 year old. It's super easy and can be made early in the day and then just spread the sauce on top and bake. It's sweet, tangy and a bit spicy! I bet everyone will ask for seconds!

pepper, to taste

Tips:

  • For a more flavorful meatloaf, use a combination of ground beef and ground pork.
  • Soak the bread crumbs in milk before adding them to the meatloaf mixture. This will help to keep the meatloaf moist.
  • Season the meatloaf mixture generously with salt, pepper, and garlic powder.
  • Don't overmix the meatloaf mixture. Overmixing can make the meatloaf tough.
  • Form the meatloaf mixture into a loaf shape and place it in a baking pan.
  • Bake the meatloaf in a preheated oven at 350°F for 1 hour, or until a meat thermometer inserted into the center reads 160°F.
  • While the meatloaf is baking, make the apricot glaze. To make the glaze, simply combine apricot preserves, brown sugar, and Dijon mustard in a small bowl.
  • Brush the apricot glaze on the meatloaf during the last 15 minutes of baking.
  • Let the meatloaf rest for 10 minutes before slicing and serving.

Conclusion:

Apricot glazed meatloaf is a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of sweet and savory flavors is sure to please everyone at the table.
