ITALIAN FOUR-CHEESE PASTA SAUCE
Steps:
- Gather the ingredients.
- Bring a large pot of salted water to a boil. Add whichever type of pasta you choose.
- Stir, bring back to a boil and start timing according to your desired degree of doneness and instructions on the package.
- While the pasta is cooking, in a small, heavy-bottomed saucepan, heat the milk over medium-low heat.
- Add the Gorgonzola and Fontina, stirring constantly with a wooden spoon until they are melted and the mixture is homogeneous.

- Empty the can of tomatoes into a pot. Add in 3 tablespoonfuls of water into the can and swirl to get all the tomatoes and juices and empty the water into the pot. Add in onion, garlic and butter.
- Cover the pot and place over high heat. When the sauce has come to a boil, turn the heat down to low and simmer for 45 minutes to 1 hour, until the onion is extremely soft, stirring occasionally.
- Remove from heat, use an immersion blender and blend until the sauce is smooth or until no large chunks of onion and garlic remains. If you don't want to blend the sauce, simply use a slotted spoon to remove the onion and garlic and if you are using whole tomatoes, crush the tomatoes against the side of the pot.
- Taste the sauce - it's highly likely that you will not need anymore salt as the canned tomatoes are usually salted, but do add some if you think it's too bland.
- Cover the pot and prepare your pasta. Reheat the sauce on medium-low heat until simmering if necessary.

- Saute the diced onion in a little bit of olive oil, butter, or cooking spray, in a medium saucepan over medium heat. (If you like garlic, you could add a few diced garlic cloves too).
- Add the stewed tomatoes and the tomato paste. Stir to combine.
- Add the brown sugar. Start with just 1/2 a cup. If you like it sweet, keep adding more. Here is when you can add salt, pepper, and any herbs like basil and oregano.
- Turn the heat down to low and simmer for at least an hour. Stir every so often. The stewed tomatoes will keep breaking down the longer you cook it, so you can keep going for a less chunky sauce. The perfect sauce for any pasta that can also be used as a pizza sauce, or for meatballs, etc.

This is a recipe I thought of when I wanted pasta, but had no sauce on hand. I serve it with Spinach Fettucine pasta noodles. The sauce does not look like it will make lot, but trust me it is thick and rich and goes along way.

- Saute mushrooms with little bit of the olive oil and a teaspoon each of the dressing, onion, garlic, and italian seasoning.
- Blend mushrooms as well as oil into almost purree. (Yes, I know it looks disgusting trust me).
- Microwavable safe bowl place two pints of tomatoes plus the rest of the onion, garlic and italian dressing and seasoning. Cover with paper towl and microwave between 2-4 minutes until most of the tomatoes have popped. Stir once during time frame.
