TOMATO, PEANUT BUTTER AND MAYO SANDWICH

Tomato, Peanut Butter and Mayo Sandwich image

This is a simple sandwich that I have been eating since I was a little kid. I looked to see if I could find it on Zaar, but was not able to. I just had to post it. I know the ingredients seem like a very unlikely combination, but trust me, these sandwiches are really good! They remind me of summer. Please use fresh, ripe tomatoes! It makes a huge difference! I also reccomend using real mayo, not lite, fat free or miracle whip. This is not a low-fat sandwich, but I figure it is fine on occation...like when the tomatoes are ripe from the garden! Enjoy!

Provided by Stuart O'Keeffe

Time 15m

Yield 4 to 6 servings

Number Of Ingredients 13

1/4 cup creamy peanut butter
1/4 cup coconut milk
2 tablespoons fresh lime juice
2 tablespoons soy sauce
4 teaspoons light brown sugar
1 teaspoon crushed red pepper
1 1/2 cups creamy peanut butter
2 teaspoon chili powder, plus more to taste
1 teaspoon cumin
1 teaspoon crushed red pepper
Pinch of salt
8 slices brioche bread
1 package Irish Cheddar, cut into slices

Steps:

  • Preheat the broiler.
  • For the satay sauce: Whisk the peanut butter, coconut milk, lime juice, soy sauce, brown sugar and crushed red pepper together in a small bowl. Set aside.
  • For the sandwiches: Combine the peanut butter, chili powder, cumin, crushed red pepper and salt in a small bowl. Stir well.
  • On a nonstick baking sheet, lay out 4 slices of the brioche and spread with the spicy peanut butter. Top each slice with about 3 slices of the cheese. Broil until the cheese is melted, about 2 minutes.
  • Close the sandwiches with the remaining brioche and broil again until the top slices are toasted, about 1 minute--watch closely, as broilers vary. Flip the sandwiches on the baking sheet and broil one more time until the top slices are toasted, about 1 minute. Cut the sandwiches into triangles, drizzle with the satay sauce and serve.

Tips:

  • Choose ripe, juicy tomatoes. This will ensure that your sandwich is packed with flavor.
  • Slice the tomatoes thinly. This will help them to evenly distribute their flavor throughout the sandwich. You can use a sharp knife or a mandoline to slice the tomatoes.
  • Use creamy peanut butter. This will create a smooth and spreadable consistency that is easy to eat.
  • Add a pinch of salt and pepper to the peanut butter. This will help to enhance the flavor of the peanut butter and tomatoes.
  • Use your favorite bread. You can use white bread, wheat bread, or even sourdough bread. Just make sure that the bread is sturdy enough to hold up to the peanut butter and tomatoes.
  • Top the sandwich with your favorite toppings. You can add a variety of toppings to your sandwich, such as lettuce, bacon, or cheese. Get creative and experiment with different combinations to find your favorite.

Conclusion:

The peanut butter and tomato sandwich is a classic for a reason. It is a simple but delicious sandwich that is perfect for a quick lunch or snack.
