2 tablespoons fermented black beans
1/4 cup dry white wine, sherry or water
2 tablespoons peanut or corn oil
1 large onion, halved, sliced thick and separated into rings
1 pound thin-sliced flank or sirloin steak
1 teaspoon minced garlic, ginger or both
Fresh black pepper
2 tablespoons soy sauce
White rice

Tips:

  • Use the right beans. Black beans are the traditional choice for this dish, but you can also use other types of beans, such as pinto beans or kidney beans.
  • Soak the beans overnight. This will help to soften the beans and make them more digestible.

  • Simmer the beans until they are tender. This will usually take about 1 hour.
  • Serve the beans hot. Black beans are a delicious and versatile dish that can be served as a main course or a side dish. They can also be used in burritos, tacos, and other Mexican dishes.
