SALAMI APPETIZERS
Yummy appetizers. You can make up a tray with these, or use your imagination and use bologna or other meats. If I use bologna, I add a tablespoon of mustard to the cheese spread.

Steps:
- Preheat the oven to 350 degrees F.
- Slice open the baguette and place it on a baking sheet. Top one half with a layer of the Camembert and the other half with the salami (go for about 2 layers of salami-not too much, not too little). Bake until the bread is toasty and the cheese is melty, about 5 minutes.
- Transfer to a serving plate and top with tomatoes, onions, bell pepper, a big pile of lettuce, olives, pickled peppers, cornichons and more cornichons, and drizzle liberally with the Vinaigrette. Sandwich together and enjoy!
- In a large measuring cup, combine the vinegar and shallot and let it sit for a few minutes so the shallot can mellow out. Whisk in the mustard and then drizzle in the olive oil while whisking continuously so that it emulsifies. Season with salt and pepper.
SIMPLE SALAMI SANDWICH
This simple salami sandwich is perfect for those hot summer days when you don't want to fire up the oven. The olive mixture poses as a dressing for the lettuce and tomato but also soaks down in that top piece of bread so it's not dry.

SALAMI SNACKS
This silly little recipe came from my husbands family. They would munch on these over late night cocktails. Don't judge 'em 'til you've tried 'em. Everyone says "ewww" when they first read the list of ingredients, even me! But, they are addictive.

SALAMI ROLL-UPS (APPETIZERS)
I don't really know what these are called, officially, but it was often part of an appetizer tray. I really loved these though, and could devour an entire plate by myself. :D Sorry the ingredients and serving size are estimated, it's been literally 10 or more years since I've had the pleasure of making and/or eating these wonderful little appetizers, but I wanted to share with the 'Zaar community. This is a really iffy food for me to eat nowadays with IBS, because it's made with beef and cream cheese, although the cream cheese can be substituted with soy cream cheese like Tofutti Better Than Cream Cheese. We used Philadelphia brand back then.

BAKED SALAMI
This is a great appetizer served with slices of light or dark rye bread. The proportions of marmalade and mustard used are up to you. I usually just slather enough on the top to cover the whole salami....you may use less than specified, or more. Servings depends on the size of the salami used.

- Top with the Marmalade and Dijon mustard.
- Enough to cover the whole top of the salami.
- Wrap in foil and bake in a slow oven for 4 hours.
- Once plated, cut through the salami leaving sandwich size pieces but the presentation should still look like a whole salami.

BAKED SALAMI
I found this recipe years ago. My first thought was that it was strange, but decided to keep it anyway. I have made this many times since and it is one of the first appetizers to go! It is simple enough for football parties or nice enough for cocktail parties. Be careful when you slice the salami so that all the slices are on the same side. The salami has a tendency to twist! Serve with crackers.

Steps:
- Preheat oven to 325 degrees F (165 degrees C). Line a baking dish with aluminum foil.
- Partially slice the salami into 1/4-inch thick slices, making sure the cuts do not go all the way through. Place the salami into the prepared baking dish, and bake for 1 hour. Drain off the grease.
- Mix the barbecue sauce and brown sugar together in a bowl, stirring until the sugar is dissolved. Pour about 2 cups of the sauce over the salami, and retain the rest for basting. Return the salami to the oven and bake for 45 minutes more, basting occasionally with the reserved sauce. Serve on a platter with a knife so guests can cut their own slices.

SIMPLE SLICED SALAMI SNACKS
This easy to do , addictive snack couldn't be simpler! These are great with some good cheese,a great bread and a glass of wine. Originally from a January/February issue of "Tastes of Italia" magazine.Try to use a really good Italian salami with this recipe. It uses 1/2 pound of sliced salami, but since the data base wouldn't let me post a recipe with one ingredient, I broke it into 2 portions! :)
