Time 8h30m

Yield 8

Number Of Ingredients 13

¼ cup soy sauce
3 tablespoons light brown sugar
3 tablespoons distilled white vinegar
½ teaspoon garlic powder
½ teaspoon seasoned salt
½ teaspoon garlic pepper seasoning
4 fluid ounces lemon-lime flavored carbonated beverage
2 pounds beef sirloin steak, cut into 1 1/2 inch cubes
2 green bell peppers, cut into 2 inch pieces
skewers
½ pound fresh mushrooms, stems removed
1 pint cherry tomatoes
1 fresh pineapple - peeled, cored and cubed

Steps:

  • In a medium bowl, mix soy sauce, light brown sugar, distilled white vinegar, garlic powder, seasoned salt, garlic pepper seasoning, and lemon-lime flavored carbonated beverage. Reserve about 1/2 cup of this marinade for basting. Place steak in a large resealable plastic bag. Cover with the remaining marinade, and seal. Refrigerate for 8 hours, or overnight.
  • Bring a saucepan of water to a boil. Add green peppers, and cook for 1 minute, just to blanch. Drain, and set aside.
  • Preheat grill for high heat. Thread steak, green peppers, mushrooms, tomatoes, and pineapple onto skewers in an alternating fashion. Discard marinade and the bag.
  • Lightly oil the grill grate. Cook kabobs on the prepared grill for 10 minutes, or to desired doneness. Baste frequently with reserved marinade during the last 5 minutes of cooking.

SKEWERED SESAME SIRLOIN

Skewered Sesame Sirloin image

Another one of my recipes for the grill! I love grilling outdoors....something about being outside instead of in the kitchen makes me smile! This is an asian inspired marinade for sirloin, cut in to strips and threaded on skewers. I like to grill some zucchini or asparagus with this and serve with rice. Prep time is actually marinating time.

Time 1h17m

Number Of Ingredients 11

3 pounds steak ((I used New York Strip Steak))
¾ cup Kroger lite soy sauce
¼ cup Kroger apple cider vinegar
¼ cup Kroger clover honey bear honey
¼ cup Kroger canola oil
1 teaspoon minced garlic
¼ cup water
1 bundle green onions (thinly sliced)
1 large red bell pepper (sliced into bite size pieces)
1 red onion (sliced into bite size pieces)
1 teaspoon private selection sesame seeds (for garnish, optional)

Steps:

  • Cut the steak into bite size pieces and set aside.

  • Whisk until all the ingredients are combined, then add the steak pieces.
  • Let the steak marinate for at least an hour. We prefer to let it marinate over night.
  • If using wooden skewers, before sliding on your steak and vegetables, be sure the skewers soak in cold water for 20-30 minutes to avoid burning or breaking.
  • Slide your steak pieces, red onion and red pepper slices onto the skewers, leaving about and inch and a half on each end for rotating on the grill.
  • Place your skewers on the grill (pre-heated to about 300 degrees F) and rotate them every one to two minutes until they have reached your desired meat preference (I like my steak cooked medium and it took about 6-7 minutes to cook).
  • Remove from grill and garnish with the 1/3 of preserved green onions and the sesame seeds.
  • Serve warm!

STEAK SKEWERS WITH SCALLION DIPPING SAUCE

Categories     Marinate     Dinner     Steak     Healthy     Green Onion/Scallion     Bon Appétit     Dairy Free     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free

Yield Makes 4 servings

Number Of Ingredients 24

Meat and marinade:
1 cup canned unsweetened coconut milk
1/4 cup fish sauce (such as nuoc nam or nam pla)
2 tablespoons palm sugar or (packed) light brown sugar
1 tablespoon fresh lime juice
6 garlic cloves
4 red or green Thai chiles, stemmed
2 lemongrass stalks, bottom third only, tough outer layers removed
1 1 1/2" piece ginger, peeled
2 pounds tri-tip, top sirloin cap steak, or rib eye, fat cap left on
Scallion dipping sauce:
15 scallions, very thinly sliced
1/4 cup fish sauce (such as nuoc nam or nam pla)
3 tablespoons grapeseed oil
2 tablespoons chinkiang (black) vinegar
2 tablespoons toasted sesame seeds
Basting sauce:
1/2 cup canned unsweetened coconut milk
3 tablespoons fish sauce (such as nuoc nam or nam pla)
1 1/2 tablespoons fresh lime juice
2 garlic cloves, crushed
Ingredient info: Chinkiang vinegar, also called black vinegar, an aged vinegar made from glutinous rice and malt, is available at Asian markets.
Special Equipment
Eight 8" metal or bamboo skewers (soak bamboo skewers for 1 hour before using)

Steps:

  • For meat and marinade:
  • Purée all ingredients except steak in a blender or a food processor until smooth. Trim strip of fat (sometimes called a fat cap) from meat. Cut fat into 1/4"-1/2" cubes; cut meat into approximately 1" cubes. Place fat and meat in a large bowl. Add marinade and toss to coat; cover and chill overnight.
  • Remove fat and meat from marinade, brushing off excess. Thread onto skewers, alternating meat with fat, so that pieces are touching but not pressed tightly together (which would slow down cooking). Leave at least 1" of space at the ends of skewers for easy turning. Discard marinade; save excess fat for basting liquid.
  • For scallion dipping sauce:
  • Combine all ingredients in a large bowl just before you begin grilling; stir occasionally.
  • For basting sauce:
  • Mince any reserved leftover fat. Transfer to a small saucepan. Cook over medium-low heat until fat is heated through, about 3 minutes (fat will not melt completely). Add all ingredients and cook until just heated through; keep warm.
  • Build a medium fire in a charcoal grill, or heat a gas grill to medium-high. Grill skewers, brushing with basting sauce and turning every 2 minutes, for 10 minutes. Stop basting and cook, turning every 2 minutes, until browned around edges and cooked through, about 6 minutes more. Serve with scallion dipping sauce on the side.

Look for steaks that are well-marbled and have a deep red color. - To make sure the steak is cooked to your desired doneness, use a meat thermometer. The internal temperature of the steak should be 145°F for medium-rare, 160°F for medium, and 170°F for well-done. - If you don't have a meat thermometer, you can also use the touch test to check the doneness of the steak. For medium-rare, the steak should feel slightly firm to the touch. For medium, the steak should feel slightly springy. For well-done, the steak should feel firm to the touch. - Let the steak rest for a few minutes before slicing it. This will allow the juices to redistribute throughout the steak, resulting in a more tender and flavorful steak. - Serve the steak with your favorite sides, such as mashed potatoes, roasted vegetables, or a simple salad.
