SAUSAGE AND PEPPER PENNE

Sausage and Pepper Penne image

This recipe is the best when made using farmer's sausage, but any sausage links will do. Add the red pepper flakes at the end for a little kick, or leave them out if spice isn't for you.

SKILLET PENNE AND SAUSAGE SUPPER

Skillet Penne and Sausage Supper image

Try this recipe if you're looking for something quick and easy with great flavor. The pasta cooks right in the skillet so there's no need for extra pots. Don't make this without the sun-dried tomatoes because it will not have as much flavor. My husband recently told me that this is his favorite of the pasta dishes I cook. Recipe is from America's Test Kitchen.

Time 30m

Yield 4-6 serving(s)

Number Of Ingredients 12

1 tablespoon olive oil
1 onion, minced
salt
1 lb sweet Italian turkey sausage or 1 lb hot Italian turkey sausage, casings removed
3 garlic cloves, minced
1/2 cup sun-dried tomato packed in oil, rinsed and chopped fine
8 ounces penne (about 2 1/2 cups, can also use ziti)
2 cups low sodium chicken broth
1 cup milk
1 (5 ounce) bag Baby Spinach
1 ounce parmesan cheese, grated or 1/2 cup parmesan cheese
pepper, to taste

Steps:

  • Heat olive oil in a 12-inch nonstick skillet over medium heat until shimmering. (Be sure to use at least a 12-inch size skillet to hold all ingredients.) Add the onion and 1/2 teaspoon salt and cook until softened, about 5 minutes.
  • Stir in the sausage and cook, breaking it up with a wooden spoon, until no longer pink, about 4 minutes.
  • Stir in the garlic and cook until fragrant, about 15 seconds. Sprinkle the sun-dried tomatoes and penne evenly over the sausage. Pour the broth and milk over the pasta. Cover and bring to a simmer. Reduce heat to medium-low and continue to simmer, stirring occasionally, until the pasta is tender, about 10 minutes.
  • Stir in the spinach a handful at a time and cook until wilted, about 2 minutes. (It may seem like a lot of spinach, but it will wilt considerably.) Stir in the Parmesan and season with salt and pepper to taste.
  • Note: You can use Italian pork sausage, but you may have to spoon some of the fat off before adding the pasta.

Tips:

  • Choose the right penne pasta. Use a high-quality penne pasta made with durum wheat for the best results. Durum wheat pasta has a higher protein content and will hold its shape better during cooking.
  • Cook the pasta al dente. This means cooking the pasta until it is tender but still has a slight bite to it. Al dente pasta will absorb the sauce better and have a better texture.
  • Use a good quality sausage. Look for a sausage that is made with fresh, high-quality meat. Avoid sausages that are made with fillers or preservatives.
  • Sauté the sausage until it is browned. This will help to develop the flavor of the sausage and prevent it from becoming dry.
  • Use fresh spinach. Fresh spinach has a better flavor and texture than frozen spinach. If you are using frozen spinach, be sure to thaw it and squeeze out all of the excess water before adding it to the skillet.
  • Add some Parmesan cheese. Parmesan cheese adds a delicious salty and nutty flavor to the dish. You can add it to the skillet at the end of cooking or sprinkle it on top of the pasta when serving.

Conclusion:

Skillet penne with sausage and spinach is a quick and easy weeknight meal that is sure to please the whole family. It is a great way to use up leftover sausage and spinach, and it is also a budget-friendly meal. This dish is also very versatile. You can add other vegetables, such as mushrooms, peppers, or zucchini. You can also use different types of sausage, such as Italian sausage or chorizo. No matter how you make it, skillet penne with sausage and spinach is a delicious and satisfying meal.
