HAM & POTATOES IN A SKILLET

Ham & Potatoes in a Skillet image

My mom showed me this trick to flavor potatoes to go with a ham slice. Easy and delicious. Serve with green beans and/or a salad.

Provided by HollyLQuinn

Categories     One Dish Meal

Time 35m

Yield 4 serving(s)

Number Of Ingredients 3

1 (1 1/2 lb) ham steaks
1 lb potato (4 or 5)
2 tablespoons dark brown sugar

Steps:

  • Dice potatoes into small pieces. I use thin skinned potatoes and don't bother to peel, but if you prefer, peeled potatoes work well too. (The potatoes can be cooked in advance, or, of you want a really speedy meal, you could use the pre-cut pre-cooked diced potatoes from the produce section).
  • Boil potatoes in lightly salted water until soft, about 25 minutes. Drain.
  • Fry ham in heavy skillet over medium heat for about 3 minutes, flip and cook for a few more minutes, until there's a nice bit of juice in the pan. Add brown sugar to the pan, and turn ham to coat. simmer for about 5 minutes, turning occasionally, until ham is heated through.
  • Add potatoes to pan (you don't have to remove the ham, just lift it with a fork and put the potatoes underneath). Stir to coat evenly.
  • Serve.

SKILLET POTATOES

Skillet Potatoes image

Provided by Daphne Brogdon

Categories     side-dish

Time 1h20m

Yield 8 servings

Number Of Ingredients 5

8 tablespoons (1 stick) butter
4 cloves garlic, chopped
2 russet potatoes, skin left on
Salt
3 sprigs fresh thyme leaves

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat a 10-inch cast-iron or nonstick skillet over low heat. Add the butter; when melted, add the garlic and cook until soft but not browned, 3 to 4 minutes.
  • Slice the potatoes on a mandoline set to 3mm (about the thickness of 3 credit cards). Place the potatoes in a large bowl; add the melted garlic butter and sprinkle with salt. Toss well to ensure all the slices are coated.
  • Place the skillet used for the butter over low heat. Carefully layer the potato slices in the skillet, overlapping them in a circular pattern starting from the edge of the skillet and working towards the center. Continue until you have about five layers of potatoes.
  • Set a medium pot lid (6 to 8 inches wide) on directly on top of the potatoes. Then place a heavy pot on top of the lid to weight it down. Adjust the heat to medium-low and cook for about 15 minutes on the stovetop, then transfer to the oven and bake until the bottom is golden brown and crispy, another 15 minutes. (You can use a spatula to peek at the bottom to make sure it's golden brown.)
  • Remove the skillet from the oven and let the potatoes rest for 15 minutes. Remove the pot and lid, and place a plate upside down on the skillet. Using oven mitts, carefully turn the skillet over to release the potatoes onto the plate. Garnish with thyme leaves and serve.

SKILLET PORK CHOPS WITH ONION AND POTATOES

Skillet Pork Chops With Onion and Potatoes image

This is a recipe handed down from my grandmother to my mom and now to me. It is simple and hearty and can be changed as your tastes wish - different seasonings in flour, different cheeses, sweet potatoes instead of white, a favorite vinegar instead of lemon juice, etc. Use the number of bouillon cubes based upon how much salt your family prefers. The only limit is your imagination.

Provided by chefjen

Categories     One Dish Meal

Time 50m

Yield 4 serving(s)

Number Of Ingredients 11

2 tablespoons vegetable oil
2 -3 tablespoons all-purpose flour
salt
pepper
4 pork chops, trimmed (1/2 -3/4" thick)
1/3 cup parmesan cheese
4 yukon gold potatoes, thinly sliced
2 medium yellow onions or 2 medium white onions, thinly sliced
2 -3 beef bouillon cubes
3/4 cup hot water
1 tablespoon fresh lemon juice

Steps:

  • Heat oil in a large skillet over medium heat.
  • Coat pork chops with flour mixed with salt and pepper.
  • Place chops in skillet and brown about 4 minutes on each side.
  • In a small bowl, mix Parmesan with salt and pepper.
  • Sprinkle about half of cheese mixture over pork chops.
  • Layer chops with the potatoes.
  • Sprinkle remaining cheese mixture over potatoes.
  • Top with the onion slices.
  • In a small bowl, dissolve bouillon with the hot water.
  • Stir in lemon juice and and pour over the layered pork chops.
  • Simmer approximately 30-35 minutes, until vegetables are tender and pork has reached an internal temperature of 155 degrees.

Tips:

  • Select the Right Potatoes: Yukon Gold or Russet potatoes are ideal for skillet potatoes, as they hold their shape well and crisp up nicely.
  • Cut Potatoes Uniformly: Cut the potatoes into evenly sized pieces to ensure even cooking. Aim for 1-inch cubes or wedges.
  • Soak Potatoes (Optional): Soaking the potatoes in cold water for 15-30 minutes helps remove excess starch and results in crispier potatoes.
  • Use a Well-Seasoned Skillet: A well-seasoned cast iron or stainless steel skillet promotes even cooking and prevents the potatoes from sticking.
  • Start with a Hot Skillet: Heat the skillet over medium-high heat until it's hot and shimmering before adding the potatoes. This helps create a crispy crust.
  • Don't Overcrowd the Skillet: Cook the potatoes in batches if necessary to avoid overcrowding the skillet. Overcrowding can result in steamed potatoes instead of crispy ones.
  • Season Generously: Season the potatoes liberally with salt, pepper, and other desired seasonings. You can also add herbs like rosemary or thyme for extra flavor.
  • Flip the Potatoes Regularly: Use a spatula to gently flip the potatoes every few minutes to ensure even browning and prevent them from sticking.
  • Add Aromatics: Enhance the flavor of your skillet potatoes by adding aromatics like garlic, onion, or bell peppers. Sauté them in the skillet before adding the potatoes.
  • Deglaze the Skillet: Once the potatoes are cooked, deglaze the skillet with a splash of water or broth to dissolve any browned bits and create a flavorful sauce.

Conclusion:

Skillet potatoes are a versatile and delicious side dish that can complement a variety of main courses. Whether you prefer them crispy, tender, or somewhere in between, there's a skillet potato recipe out there to suit your taste.
