Time 55m

Number Of Ingredients 9

1/2 stick unsalted butter
1 small yellow onion, chopped
20 ounces frozen chopped spinach, thawed and squeezed dry
1 cup whole-milk ricotta
3 large eggs
1/4 cup crumbled feta
2 tablespoons chopped fresh dill
Coarse salt and pepper
4 sheets frozen phyllo dough, thawed

Steps:

  • Preheat oven to 375 degrees. In a 10-inch nonstick, oven-safe skillet, melt butter over medium. Transfer 2 tablespoons to a small bowl. Add onion to skillet and cook, stirring, until softened, 5 minutes. Remove from heat and let cool slightly. Stir in spinach, ricotta, eggs, feta, dill, 1 teaspoon salt, and 1/4 teaspoon pepper.
  • Lay 1 sheet phyllo on a work surface and lightly brush with reserved melted butter. Lay over spinach mixture, folding edges under to fit inside skillet. (Keep extra phyllo covered while you work.) One at a time, brush remaining 3 sheets and add to skillet, rotating and scrunching each sheet slightly so edges are offset and top is ruffled. Bake until golden brown and heated through, about 30 minutes.

Tips:

  • Thaw frozen spinach thoroughly before using. Excess moisture will make the pie soggy.
  • Use a large skillet to cook the spinach. This will help to evenly distribute the heat and prevent the spinach from burning.
  • Cook the spinach until it is wilted and tender. This will take about 5 minutes.
  • Season the spinach with salt, pepper, and nutmeg. This will help to enhance the flavor of the pie.
  • Use a pre-made pie crust to save time. Or, if you'd prefer, you can make your own pie crust from scratch.
  • Be careful not to overfill the pie crust. Otherwise, the pie may be difficult to seal and the filling may spill out during baking.
  • Bake the pie at 375 degrees Fahrenheit for 30-35 minutes, or until the crust is golden brown and the filling is bubbly.
  • Let the pie cool for at least 15 minutes before slicing and serving. This will help the filling to set and make the pie easier to slice.

Conclusion:

Skillet spinach pie is a delicious and easy-to-make dish that is perfect for a quick and easy meal. With its creamy, flavorful filling and flaky crust, this pie is sure to be a hit with your family and friends. So next time you're looking for a hearty and satisfying meal, give skillet spinach pie a try!
