PUMPKIN BREAD WITH CHOCOLATE CHIP STREUSEL

Pumpkin Bread With Chocolate Chip Streusel image

This pumpkin quick bread is everything you love about the traditional version, but with a ribbon of spiced-chocolate-nut streusel running through the center and topped with more of the same. We like ours served with a scoop of vanilla ice cream.

Time 1h30m

Yield One 9-inch loaf (8 to 10 servings)

Number Of Ingredients 19

1/4 cup packed light brown sugar
1/4 cup packed dark brown sugar
1/4 cup chopped walnuts or pecans
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/2 tablespoon cold butter
1/4 cup semisweet chocolate chips
1 1/2 cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon baking soda
3/4 teaspoon fine sea salt
1/2 cup granulated sugar
1/2 cup light brown sugar
1/2 cup (1 stick) unsalted butter, softened
2 large eggs
1/2 cup canned pumpkin
1/2 cup sour cream
1/2 tablespoon dark rum
1 teaspoon vanilla extract

Steps:

  • Heat the oven to 350 degrees. Grease and flour a nonstick 9-inch loaf pan. (Or, if the pan is not nonstick, line with parchment paper and butter the paper.)
  • Prepare the streusel: In a bowl, combine the brown sugars, nuts, cinnamon and ginger. Cut in butter with pastry blender or your fingers until mixture is crumbly. Divide the mixture in half and add the chocolate chips to one half. Leave the other plain and set it aside for the topping.
  • In a separate bowl, combine the flour, cinnamon, baking soda and salt.
  • In the bowl of an electric mixer, beat sugars and butter until light and fluffy. Add eggs one at a time, beating well after each addition. Add pumpkin, sour cream, rum and vanilla extract; mix well. Gradually beat in flour mixture.
  • Spoon half of the batter into pan. Sprinkle the chocolate chip streusel over the batter, not allowing streusel to touch sides of pan. Top with remaining batter. Make sure batter layer touches edges of pan. Sprinkle remaining streusel on the top.
  • Bake for about 40 to 50 minutes or until wooden pick inserted in cake comes out clean. Cool for 30 minutes in pan on wire rack. Unmold and cool completely.

Provided by Sally

Categories     Bread

Time 3h

Number Of Ingredients 19

2/3 cups (60g) old-fashioned or quick oats
1/2 cup (100g) packed light or dark brown sugar
2 Tablespoons (15g) all-purpose flour
1/2 teaspoon ground cinnamon
1/4 cup (60g) unsalted butter, cold
optional: 1 Tablespoon (10g) semi-sweet chocolate chips
1 and 1/2 cups (188g) all-purpose flour (spoon & leveled)
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
optional: 1 cup (180g) semi-sweet chocolate chips (or chopped nuts, raisins, etc)
1/2 cup (120ml) vegetable oil (or melted coconut oil)
1/2 cup (100g) packed light or dark brown sugar
1/2 cup (100g) granulated sugar
1 large egg, at room temperature
2 teaspoons pure vanilla extract
1 cup shredded zucchini (about 1 medium)*

Steps:

  • Preheat the oven to 350°F (177°C). Grease an 8×4 inch loaf pan. See notes for muffins.
  • Combine the oats, brown sugar, cinnamon, and flour together in a medium bowl. Cut in the cold butter with two forks or a pastry cutter (preferred). Mix until the streusel resembles coarse crumbs. Stir in the chocolate chips. Set aside.
  • Whisk the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and chocolate chips (or nuts) together in a large bowl until thoroughly combined. Set aside. In a medium bowl, whisk the oil, brown sugar, granulated sugar, egg, vanilla, and zucchini together until combined. Pour into the dry ingredients. Gently whisk until *just* combined; do not overmix. Batter will be semi-thick.
  • Spread the batter into prepared loaf pan. Bake the bread for 20 minutes. Remove from the oven and sprinkle streusel on top. Using the back of a spoon, gently press the streusel down into the top of the loaf. The reason you are adding it after 20 minutes is to prevent it from sinking to the bottom of the bread as it bakes. Return bread to the oven and bake for an additional 25-30 minutes or until a toothpick inserted in the center comes out clean. If you notice the loaf is browning on top or on the edges too quickly, loosely tent the loaf with aluminum foil. Baking times vary so keep an eye on yours.
  • Remove the bread from the oven and set on a wire rack. Allow to cool completely before slicing.
  • Cover and store leftover bread at room temperature for up to 3-4 days or in the refrigerator for up to 1 week.

Tips:

  • For a moist and tender zucchini bread, make sure to use freshly grated zucchini. Grating the zucchini helps release its moisture, which contributes to the bread's texture.
  • Don't overmix the batter. Overmixing can result in a tough and dense bread. Mix just until the ingredients are well combined.
  • To prevent the bread from sticking to the skillet, grease the pan thoroughly with butter or cooking spray.
  • Bake the bread until a toothpick inserted into the center comes out clean. This usually takes around 45-50 minutes.
  • For a crispy streusel topping, make sure to use cold butter. The cold butter will help the streusel hold its shape in the oven.
  • If you don't have a skillet, you can also bake the zucchini bread in a regular loaf pan. Just adjust the baking time accordingly.

Conclusion:

This skillet zucchini bread with chocolate chip streusel is a delicious and easy-to-make treat that is perfect for breakfast, brunch, or dessert. The bread is moist and tender, with a slightly sweet flavor from the zucchini. The streusel topping adds a crunchy and flavorful contrast. This recipe is sure to be a hit with everyone who tries it!
