2 large sweet potatoes
2 teaspoons chili powder
1 teaspoon garlic powder
1/4 teaspoon cayenne powder
1/2 teaspoon ground cumin
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
Vegetable oil, for deep-frying
Blue Cheese and Chive Dip, recipe follows
1 cup sour cream
1 cup mayonnaise, store-bought
1 teaspoon fresh lemon juice
1 cup crumbled blue cheese
1 1/2 tablespoons honey
1/2 bunch finely chopped chives, plus extra for garnish
Kosher salt and freshly ground black pepper

Steps:

  • Peel sweet potatoes and discard skin. Using the vegetable peeler or a mandoline make long thin chips by peeling/slicing lengthwise from top to bottom. Place in a bowl of ice water and chill for 1 hour. Drain in a colander and layout on paper towels and pat dry.
  • Combine chili powder, garlic powder, a pinch of cayenne, cumin and salt and pepper.
  • Heat vegetable oil in a large pot to 375 degrees F. Fry the potatoes in single layer batches for 2 to 3 minutes until golden brown. Lift chips out with slotted spoon and drain on paper towels. Season with the spice mixture and serve immediately. Serve as an appetizer with Blue Cheese and Chives dip.
  • Combine sour cream, mayonnaise, lemon juice, blue cheese, honey and chives in a medium bowl. Season with salt and pepper and garnish with chives. Serve with spicy and sweet potato chips.

2 (14.5 ounce) cans diced stewed tomatoes with chili seasonings
1 (8 ounce) can tomato sauce
¾ cup diced sweet onion
½ cup chopped celery
½ cup water
1 tablespoon chili powder
1 teaspoon ground cumin
½ teaspoon ground cinnamon
1 pinch salt
1 pinch ground black pepper
1 pinch cayenne pepper

1 pinch onion powder
½ pound ground turkey

1 cup basmati rice
500 g kumara (orange Sweet Potato)
3/4 cup frozen baby peas
3/4 cup zucchini
1/3 cup fresh breadcrumb
1 tablespoon ground cumin
1 garlic clove
1 egg
2 tablespoons fresh flat leaf parsley
salt & freshly ground black pepper
olive oil

Steps:

  • Cook the rice in a large saucepan of salted water until done.
  • Meanwhile chop & steam or boil the sweet potato until tender, drain well. Transfer to a large bowl and mash until almost smooth.
  • Cut the zucchini into small dice (about the size of the baby peas) add this and all other ingredients to kumara and mix well, season with salt & pepper.
  • Divide the mixture into equal portions and cook in non stick fry pan lightly oiled for 3 minutes each side, drain on paper towel.
  • Sprinkle with sea salt and serve on a bed of baby spinach and drizzle with sweet chili sauce.
  • Note: Nice eaten cold drizzled with lemon juice.

¼ cup all-purpose flour
1 teaspoon paprika
1 teaspoon mustard powder
1 pinch salt
½ teaspoon ground black pepper
4 large sweet potatoes, cut into wedges

  • Preheat oven to 400 degrees F (200 degrees C). Drizzle a medium baking sheet with the vegetable oil.

80 ml water
100 g caster sugar
3 small orange sweet potatoes, peeled, cut into 2mm-thick slices (kumara)
2 teaspoons cumin seeds
2 teaspoons flaked sea salt
1 teaspoon dried piri-piri, seasoning
tzatziki, to serve

Steps:

  • Preheat oven to 180°C
  • Line 2 baking trays with non-stick baking paper.
  • Combine the water and sugar in a medium saucepan over low heat. Cook, stirring, for 5 minutes or until sugar dissolves.
  • Remove from heat and set aside for 10 minutes to cool slightly then Add the sweet potato and set aside, stirring occasionally, for 15 minutes to soak.
  • Meanwhile, combine the cumin, sea salt flakes and piri piri seasoning in a bowl.
  • Drain the sweet potato and discard syrup. Place the sweet potato, in a single layer, on the prepared trays. Sprinkle with half the salt mixture.
  • Bake in preheated oven, swapping trays halfway through cooking, for 20 minutes. Remove from oven and turn over the sweet potato slices. Sprinkle with the remaining salt mixture. Bake in oven for a further 20-30 minutes or until sweet potato chips are light brown around the edges.
  • Remove from the oven and set aside for 25 minutes to cool.
  • Spoon tzatziki into a serving bowl and serve with sweet potato chips.
