1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, chopped
4 cups vegetable broth
1 small head cabbage, chopped
1 (14.5 ounce) can chopped stewed tomatoes
3 carrots, peeled and cut into coins
2 teaspoons paprika
1 bunch kale, chopped
1 (15 ounce) can chickpeas
salt and ground black pepper to taste

Steps:

  • Heat olive oil in a large pot over medium heat. Saute onion and garlic in the hot oil until onion is translucent, about 5 minutes. Add broth, cabbage, tomatoes, carrots, and paprika. Cook until cabbage softens, 10 to 15 minutes. Add kale, cover to trap steam, and cook until soft, 7 to 10 minutes. Pour in chickpeas and cook until heated through, 1 to 2 minutes. Season with salt and pepper and serve hot.

3 cups nonfat vegetable broth (beef is the best) or 3 cups nonfat chicken broth (beef is the best)
2 garlic cloves, minced
1 tablespoon tomato paste
2 cups chopped cabbage
1/2 yellow onion
1/2 cup chopped carrot
1/2 cup green beans
1/2 cup chopped zucchini
1/2 teaspoon basil
1/2 teaspoon oregano
salt & pepper

Steps:

  • Spray pot with non stick cooking spray saute onions carrots and garlic for 5 minutes.
  • Add broth, Tomato paste, cabbage, green beans, basil, oregano and Salt & Pepper to taste.
  • Simmer for a about 5-10 minutes until all vegetables are tender then add the zucchini and simmer for another 5 or so minutes.
  • I have tried different variations. Leaving out green beans. Adding chopped green onions in addition to the yellow onion.
  • All very good. You can customize it a bit.

1 cup finely diced celery
1 cup diced onion
1 (28 ounce) can tomatoes (preferably diced)
2 (10 ounce) cans chicken broth
3 cups water
1 (1 1/4 ounce) package taco seasoning mix (dry)
2 -3 minced garlic cloves
1 cup frozen green beans

Steps:

  • Saute celery and onion using cooking spray.
  • Add tomatoes, soups and water.
  • Add taco mix and garlic.
  • Let simmer partially covered for about 1 hour.
  • Add the green beans and simmer another 15 minutes.
  • Top with parmesan, or low-fat cheese then put a dollop of fat-free sour cream on top.
