1 red bell pepper, cored, seeded, and quartered
1 Scotch bonnet or habanero chile, halved (seeds removed, if less heat is desired)
1/4 sweet onion, such as Vidalia, cut into 1-inch pieces (1/2 cup)
1/4 cup fresh orange juice
3 tablespoons fresh lemon juice
1 teaspoon cumin seeds, toasted
1 tablespoon packed fresh oregano leaves, plus more for serving
Coarse salt
2 pounds skirt steak, cut crosswise into 6 pieces (each about 4 inches wide)
Steamed rice and diced avocado, for serving

Steps:

  • In a blender, puree oil, bell pepper, chile, onion, orange and lemon juices, cumin seeds, oregano, and 1 teaspoon salt until smooth. (Sauce can be made up to 3 days ahead and refrigerated; remove 30 minutes before serving.) Transfer to a serving bowl; just before serving, stir and top with more oregano leaves and a drizzle of oil.
  • Preheat grill for direct-heat cooking (medium-high on a gas grill). On a work surface, lay 3 steak pieces flat in a row. Insert a long metal skewer through all 3 pieces, about 1/2 inch from one short end. Insert a second skewer through all 3 pieces, 1/2 inch from other short end. 1/2 cup maple syrup

1/2 cup heavy cream
One 1-pound block American cheese, cut into cubes
2 red onions, cut into thick rings
1 red pepper, cut into thick rings, seeds removed
1 yellow pepper, cut into thick rings, seeds removed
Kosher salt and freshly ground black pepper
6 hoagie rolls, preferably Amoroso's
1/4 cup (4 tablespoons) melted butter
Hot pickled cherry peppers, sliced, for garnish

Steps:

  • Combine the orange juice, soy sauce, maple syrup, olive oil and balsamic vinegar in a small bowl and pour over the skirt steak in a pan to marinate, up to 30 minutes.

You can use lemon juice, but definitely use the lime juice if you can. The onion is wonderful with this but tends to fall though the grill grates, so have an extra sweet onion sliced thick to grill as well. Allow 2 to 4 hours to marinade. (Time for marinading is included in the cooking time)

1/2 cup fresh lime juice (about 8 limes)
1 garlic clove, minced
1/2 onion, thinly sliced (for marinade)

12 medium corn tortillas, warmed
1 large tomatoes, peeled and seeded

1/3 cup reduced-sodium soy sauce
1/4 cup sugar

1 large sweet red pepper, julienned
1/2 cup reduced-fat sour cream
2 tablespoons Dijon mustard
1-1/4 teaspoons prepared horseradish

  • Cut beef widthwise into 16 slices, 1/4 in. thick. In a large resealable plastic bag, combine the soy sauce, sugar and ginger; add beef. Seal bag and turn to coat; refrigerate for 4 hours., In a large saucepan, bring water and carrots to a boil. Reduce heat; cover and simmer for 3 minutes.
