I first had this cake at a friend's house about 10 years ago. I begged her for the recipe for two weeks before she finally gave in and honored me with the recipe. It's a little time consuming, but you end up with a very elegant and delicious cake.

4 ounces white chocolate, shaved
1 teaspoon vanilla
1 teaspoon water
1/2 cup chocolate chips

1/2 cup pecans, chopped
1/2 teaspoon salt
1/2 cup coconut
1 teaspoon baking soda
1 1/2 cups sugar
1 cup buttermilk
2 tablespoons Creme de Cacao
2 eggs
2 cups cake flour
chocolate sprinkles
1 1/2 tablespoons sugar
1 cup milk, scalded
1/2 tablespoon flour
1/4 teaspoon vanilla
1 egg, slightly beaten
1 ounce semisweet chocolate, melted and cooled
6 chocolate caramels
1/2 cup powdered sugar
1 cup whipping cream
1 teaspoon cocoa
3 -4 drops vanilla

Steps:

  • Directions for cake:.
  • Melt white chocolate in water over low heat. Cream butter and blend in chocolate. Sift flour with salt and baking soda. Add flour mixture, sugar and buttermilk to chocolate/butter mixture. Beat 2 minutes. Beat in eggs one at a time. Add vanilla. Fold in chocolate chips, pecans and coconut. Bake in 2 well-greased, floured 9-inch cake pans at 350 degrees F for 30 minutes. When done, let cakes cool for 10 minutes and remove from pans. Allow cakes to cool completely. While cake is baking, prepare the Chocolate Custard.
  • Directions for Chocolate Custard:.
  • Combine sugar and flour. Beat into eggs. Beat chocolate into egg mixture. Add to scalded milk in double boiler and cook, stirring often until thickened. Add vanilla and caramels and stir until caramels melt. Allow custard to cool completely.
  • Directions for Frosting:.
  • Sift together sugar and cocoa. Whip the cream until frothy. Gradually beat in sugar mixture. Beat in vanilla.
  • To complete the cake, set bottom layer of cake on serving plate and drizzle with creme de cacao. Evenly spread chocolate custard over the bottom layer to about 1/4 inch from the edge. Put remaining layer of cake on top of the custard. Frost with the frosting. Add chocolate sprinkles on top.
  • Tip: To keep your serving plate clean, put strips of wax paper along the edges of the cake covering the plate. When you are finished frosting the cake, gently remove the pieces of wax paper.

SLICE OF HEAVEN APPLE SPICE CAKE

Slice of Heaven Apple Spice Cake image

This is a recipe that I clipped from a flyer in the Sunday paper some time ago. Since it's a little different than the other apple spice cakes on Zaar, I thought I'd share it. Because bake times and servings are dependent on the pan size you choose, the times I have given here are approximate.

Time 45m

Yield 1 cake, 10-12 serving(s)

Number Of Ingredients 8

1 (18 1/4 ounce) box spice cake mix
1 (21 ounce) can apple pie filling
1/3 cup apple butter
3 eggs
1 (8 ounce) package cream cheese, softened
1/2 cup butter, softened
1 cup powdered sugar
4 tablespoons apple butter

Steps:

  • CAKE:.
  • Preheat oven to 350ºF. Grease pan (use whatever size pan you choose, just follow the box directions for bake time depending on the pan size used).
  • In a large bowl, combine the dry cake mix with the apple pie filling, apple butter and eggs. Stir well. Pour into prepared pan.
  • Bake cake for amount of time directed on the cake mix box.
  • Remove baked cake from oven and cool in pan on wire rack for 10-15 minutes. Remove cake from pan and place on a serving dish to finish cooling.
  • While cake is cooling, prepare the frosting.
  • FROSTING:.
  • Blend all the frosting ingredients together until smooth. Frost cooled cake. Serve.

Tips:

  • Use fresh, ripe dates: This will ensure that your cake has the best flavor and texture.
  • Soak the dates in hot water before using them: This will help to soften them and make them easier to blend.
  • Use a food processor or blender to blend the dates: This will help to create a smooth and creamy batter.
  • Add the eggs, sugar, and vanilla extract to the batter and mix until well combined: Make sure that the sugar is completely dissolved.
  • Pour the batter into a greased and floured 9x13 inch baking pan: Bake the cake at 350 degrees Fahrenheit for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool completely before frosting it: This will help to prevent the frosting from melting.
  • Use your favorite frosting recipe to frost the cake: A cream cheese frosting or a chocolate ganache would be delicious.

Conclusion:

Date cake is a delicious and moist cake that is perfect for any occasion. It is easy to make and can be customized to your liking with different frosting and topping options. So next time you are looking for a special dessert, give date cake a try!
