1/4 cup extra-virgin olive oil
1/4 cup soy sauce
1/4 cup fresh lemon juice (from 2 lemons)
2 tablespoons packed light-brown sugar
2 cloves garlic, smashed
1 1/2 pounds flank steak
1/2 bunch arugula (about 2 ounces), leaves torn if large
Coarse salt and freshly ground pepper
Lemon wedges, for serving

Steps:

  • Whisk together oil, soy sauce, lemon juice, brown sugar, and garlic in a bowl. Place flank steak inside a gallon-size resealable plastic bag. Add marinade, press out excess air, and seal. freshly ground pepper
1 bunch arugula, tough stems removed
1/4 medium red onion, thinly sliced
1 red chile, thinly sliced

1 cup parsley leaves with tender stems
2 tablespoons fresh lemon juice
2 tablespoons olive oil, plus more for drizzling

  • Toss arugula, onion, chile, caper berries, Parmesan, and parsley in a medium bowl. Drizzle with lemon juice and oil and toss to coat; season with salt and pepper. Drizzle steak with oil and season with salt and pepper; serve with salad.
  • Do Ahead
  • Steak can be grilled 1 day ahead. Let cool; cover and chill. Bring to room temperature before slicing.

Tips:

  • Choose the right cut of steak: For sliced steak with arugula, you'll want to choose a tender cut of steak that can be sliced thinly against the grain. Some good options include flank steak, skirt steak, or hanger steak.
  • Marinate the steak: Marinating the steak helps to tenderize it and add flavor. You can use a variety of marinades, but a simple mixture of olive oil, garlic, herbs, and spices is a good place to start.
  • Cook the steak over high heat: Sliced steak should be cooked over high heat so that it gets a nice sear on the outside while remaining tender on the inside. You can cook the steak in a skillet, on a grill, or even in a hot oven.
  • Slice the steak against the grain: Once the steak is cooked, let it rest for a few minutes before slicing it against the grain. This will help to make the steak more tender and easier to chew.
  • Serve the steak with arugula: Arugula is a peppery green that pairs well with the richness of the steak. You can simply toss the arugula with a vinaigrette or add it to a salad.

Conclusion:

Sliced steak with arugula is a delicious and easy-to-make dish that is perfect for a weeknight meal. By following these tips, you can make sure that your steak is tender, flavorful, and cooked to perfection.
