1 beef rump roast or bottom round roast (3 pounds)
1 large onion, sliced
3/4 cup reduced-sodium beef broth
1 envelope (1 ounce) au jus gravy mix
2 garlic cloves, halved
1/4 teaspoon pepper

Steps:

  • Cut roast in half. In a large nonstick skillet coated with cooking spray, brown meat on all sides over medium-high heat. , Place onion in a 5-qt. slow cooker. Top with meat. Combine the broth, gravy mix, garlic and pepper; pour over meat. Cover and cook on low for 6-7 hours or until meat is tender. , Remove meat to a cutting board. Let stand for 10 minutes. Thinly slice meat and return to the slow cooker; serve with cooking juices and onion.

2 teaspoons sugar
1 teaspoon dried oregano leaves
2 (10 1/2-oz.) cans condensed beef broth
1 (12-oz.) can beer or nonalcoholic beer
2 garlic cloves, minced
16 onion buns, split

Steps:

  • Place beef roast in 3 1/2 to 4-quart slow cooker. In medium bowl, combine all remaining ingredients except buns; mix well. Pour over roast.
  • Cover; cook on low setting for 8 to 10 hours.
  • Remove beef from slow cooker; place on cutting board or large plate. Slice beef with knife or shred with 2 forks; place in buns. If desired, skim fat from juices in slow cooker. Serve sandwiches with individual portions of juices for dipping.

I've never found a recipe I really liked for a savory, au jus-style pot roast without mushy veggies and a weird sweetness. So after some experimenting, this is the way I make it every time now. The tomato sauce disappears and will not make a tomato-flavored gravy. Quick and easy. The roast size and cut can vary, and it will still turn out great. Good for those who don't like onions, although they can be added if you like. I love to make homemade mashed potatoes and dill carrot slices for sides. Cook roast on top of sliced onion rings if desired.

1 (4 pound) boneless beef chuck roast
1 tablespoon Worcestershire sauce, or to taste
1 tablespoon Montreal-style steak seasoning
2 tablespoons olive oil
1 cube beef bouillon
1 cup hot strong black coffee
1 (8 ounce) can tomato sauce
1 teaspoon dried oregano, or to taste
2 teaspoons Worcestershire sauce, or to taste

  • Rub chuck roast with 1 tablespoon Worcestershire sauce and sprinkle on all sides with steak seasoning.

2 (14 ounce) cans beef broth
2 (1 ounce) packages envelopes dry onion soup mix
1 teaspoon dried oregano
2 cloves garlic (minced)
8 hamburger buns (or rolls)

Steps:

  • Spray slow cooker with non-stick cooking spray. Place roast in crock pot, pour beef broth on top, and sprinkle onion soup mix, oregano, and garlic on top of roast. Place lid on crock pot and cook on low for 8-10 hours or 4-5 hours on high (although I prefer the low and slow method).
  • Shred meat with two forks and spoon meat on top of buns. Pour leftover juice in the bottom of the crock pot into small bowls to use as an Au jus dip.

1 large onion, sliced
1 (14 ounce) can beef broth
4 lbs beef boneless beef rump roast, fat trimmed
2 tablespoons balsamic vinegar
1 (2/3 ounce) envelope Italian salad dressing mix
1/2 teaspoon salt
1/4 teaspoon black pepper
12 hoagie rolls, split
1 large green bell pepper, thinly sliced
12 slices provolone cheese, cut in half

Steps:

  • Place onion slices and broth in a 3 to 4 quart crock pot. Coat beef roast with vinegar. Put beef roast on top of onions in crock pot. Dust with dressing mix, salt, and pepper.
