BEEF IN BEER IN THE SLOW COOKER

Beef in Beer in the Slow Cooker image

Delicious tender beef cooked in the slow cooker with beer, shallots, bacon, and mushrooms. The Guiness® makes a lovely gravy without tasting overly strong of beer. This is quite a meaty dish so would also be nice with potatoes and carrots added. I serve this with crusty French bread to mop up the juices. Hearty and warming to come home to. Cooks in 5 hours in the slow cooker; however it would not hurt it to be cooked all day.

SLOW-COOKER BEER BRATS(COOK'S COUNTRY)

Slow-Cooker Beer Brats(Cook's Country) image

Light-bodied American lagers, such as Budweiser, work best for this recipe. Standard-size hot dog buns will be too small for the brats, so buy larger hoagie rolls.

SLOW-COOKER CHICKEN NOODLE SOUP(COOK'S COUNTRY)

Slow-Cooker Chicken Noodle Soup(Cook's Country) image

You will need a 6-quart slow cooker for this recipe. Do not cook this soup on high power or the chicken will be too tough. Three 32-ounce cartons of chicken broth will yield 12 cups.

Provided by Coppercloud

Categories     Clear Soup

Time 4h50m

Yield 1 pot, 8-10 serving(s)

Number Of Ingredients 15

6 bone-in skin-on chicken thighs (about 3 pounds)
salt and pepper
1 tablespoon unsalted butter
6 carrots, peeled and sliced into 1/2-inch rounds
4 celery ribs, sliced
2 onions, chopped
4 garlic cloves, minced
1 teaspoon dried thyme
1/4 teaspoon red pepper flakes
12 cups low sodium chicken broth
2 bay leaves
4 bone-in skin-on chicken breast halves (about 3 pounds)
2 cups egg noodles, cooked
1 cup frozen peas, thawed
2 tablespoons fresh parsley, minced

Steps:

  • 1. Pat chicken thighs dry with paper towels and season with salt and pepper. Melt butter in Dutch oven over medium-high heat. Add chicken thighs, skin-side down, and cook until skin is deep golden brown, about 8 minutes. Transfer to slow cooker.
  • 2. Pour off all but 1 tablespoon fat from pot. Cook carrots, celery, and onions until softened, about 5 minutes. Stir in garlic, thyme, and pepper flakes and cook until fragrant, about 30 seconds. Add 1 cup broth to pot and scrape up any browned bits with wooden spoon. Transfer vegetable mixture, bay leaves, and remaining broth to slow cooker.
  • Season chicken breasts with salt and pepper and wrap in foil according.
  • **Protecting Chicken Breasts: Wrapping the chicken breasts in a foil pack insulates the delicate white meat, helping keep it moist and tender. To make the foil pack, place the chicken on one side of a large piece of heavy-duty aluminum foil. Fold the foil over, shaping it into a packet that will fit into your slow cooker, then crimp to seal the edges. Place foil packet in slow cooker. Cover and cook on low until breasts are cooked through and thighs are tender, 4 to 4 1/2 hours.
  • 4. Remove foil packet from slow cooker. Carefully open foil and transfer chicken breasts to plate. Remove chicken thighs from slow cooker and transfer to plate. When cool enough to handle, shred meat into bite-sized pieces, discarding skin, bones, and excess fat.
  • 5. Stir shredded chicken, cooked noodles, peas, and parsley into slow cooker. Cover and cook until heated through, about 5 minutes. Discard bay leaves. Serve.

Tips:

  • Choose the right beer: Use a beer that you enjoy drinking, as the flavor will infuse the brats. Amber and dark beers add a rich, malty flavor, while lighter beers, such as pilsners and wheat beers, impart a crisp, refreshing taste.
  • Brown the brats before slow-cooking: This step adds flavor and creates a nice crust on the brats.
  • Use a variety of vegetables: Onions, peppers, and carrots are classic additions to slow-cooker beer brats, but you can also add other vegetables, such as potatoes, mushrooms, or zucchini.
  • Season the brats well: Use a combination of garlic, salt, pepper, and other spices to taste. You can also add a tablespoon of brown sugar or maple syrup for a touch of sweetness.
  • Cook the brats on low heat for 6-8 hours: This will allow the brats to cook through and absorb all the flavors from the beer and vegetables.
  • Serve the brats with your favorite toppings: Classic toppings include sauerkraut, mustard, and relish. You can also serve them with grilled onions and peppers, or a side of potato salad.

Conclusion:

Slow-cooker beer brats are a delicious and easy-to-make meal that is perfect for a party or a casual weeknight dinner. With a few simple ingredients and a little bit of time, you can create a flavorful and satisfying dish that everyone will enjoy. So next time you're looking for a new recipe to try, give slow-cooker beer brats a try. You won't be disappointed!
