Provided by Kare for Kitchen Treaty

Time 8h15m

Number Of Ingredients 22

1 medium yellow onion (diced, about 2 cups)
3 medium cloves garlic (minced)
1 jalapeno pepper (diced*)
2 14.5-ounce can fire-roasted diced tomatoes (plain diced tomatoes also work)
4 cups cooked black beans
1/2 cup orange juice (I use fresh-squeezed from about 2 medium naval oranges)
1/2 cup golden raisins
1 tablespoon chili powder
1 teaspoon cumin
1/2 teaspoon smoked paprika
1/2 teaspoon cinnamon
1/4 teaspoon allspice
1/2 teaspoon kosher salt
2 cups diced ripe mango (from about 2 large mangoes)
Additional salt and pepper (to taste)
Sour cream or cashew sour cream
Lime wedges (for squeezing over the top of individual servings)
Diced avocado
Sliced scallions
Chopped mango
Halved cherry tomatoes
Cilantro

Steps:

  • Add all ingredients except the mangoes and additional salt and pepper to a 3-quart or larger Crock Pot. Stir gently to combine. Cook on low for 8-10 hours (or on high for 4-6 hours). Stir in the mango, cover, and cook for another 10 minutes or so - just enough to warm the mangoes. Taste and add additional salt and pepper if desired.
  • Scoop into large bowls and top individual servings with an assortment of toppings, if you like.

SLOW COOKER SPICY BLACK BEAN AND SWEET POTATO CHILI

Slow Cooker Spicy Black Bean and Sweet Potato Chili image

This nourishing, smoky vegan chili is perfect for cold weeknights. Mix everything in the slow cooker before the chaos of the day begins, then just toss in some frozen corn a few minutes before you're ready to eat. As with any chili, toppings go far. Feel free to throw on what you have and what sounds good, like tortilla chips, cilantro or vegan cheese. The recipe calls for either coconut oil or vegetable oil. If you'd like a mild coconut flavor - which plays well with the orange juice in the chili - choose unrefined or virgin coconut oil. For a neutral flavor, choose refined coconut oil or any vegetable oil. Use one chipotle chile for a very mild chili, and four if you like yours very spicy. Tips:

  • Soaking the beans: Soaking the beans overnight or for at least 8 hours helps to reduce the cooking time and makes them more digestible. If you don't have time to soak the beans, you can use canned black beans instead.
  • Rinsing the beans: Rinsing the beans before cooking helps to remove any dirt or debris. It also helps to reduce the amount of gas that the beans produce during cooking.
  • Using a slow cooker: A slow cooker is a great way to make chili because it allows the flavors to develop slowly and evenly. If you don't have a slow cooker, you can also make chili in a regular pot on the stovetop.
  • Adding spices and seasonings: Chili is a great dish to experiment with different spices and seasonings. Some common spices and seasonings used in chili include chili powder, cumin, garlic, onion, and oregano. You can also add other spices and seasonings to taste, such as cayenne pepper, paprika, or chipotle powder.
  • Simmering the chili: Simmering the chili for at least 30 minutes allows the flavors to meld together and develop. You can simmer the chili for longer if you want a more intense flavor.
  • Serving the chili: Chili can be served as a main course or as a side dish. It can be served with a variety of toppings, such as sour cream, shredded cheese, diced tomatoes, or chopped onions.

Conclusion:

Slow cooker black bean chili is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover black beans. With a few simple ingredients and a slow cooker, you can have a delicious and hearty chili that the whole family will enjoy.
