1 1/2 pounds red new potatoes (about 18), halved if large
2 cups sauerkraut, drained
1 small onion, thinly sliced
1/2 cup low-sodium chicken broth
1/4 cup dry white wine
1 teaspoon caraway seeds
Kosher salt
Freshly ground black pepper
1 1/2 pounds bratwurst links
1/4 cup fresh flat-leaf parsley, chopped
Dark bread, such as pumpernickel, toasted
Butter
Whole-grain mustard

Steps:

  • In a 4- to 6-quart slow cooker, mix together the potatoes, sauerkraut, onion, broth, wine, caraway seeds, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Nestle the bratwurst in the vegetables. Cover and cook until the potatoes are tender, on low for 7 to 8 hours or on high for 4 to 5 hours (this will shorten total recipe time). Sprinkle the bratwurst, potatoes, and sauerkraut with the parsley and serve with the toast, butter, and mustard.

I've made many variations of this excellent main dish. The bratwurst can be plain, smoked or cheese-flavored, served whole or cut in slices, with a bun or without. It would be popular at a party or potluck.

8 uncooked bratwurst links
1 can (14 ounces) sauerkraut, rinsed and well drained
2 medium apples, peeled and finely chopped
3 bacon strips, cooked and crumbled
1/4 cup packed brown sugar
1/4 cup finely chopped onion
1 teaspoon ground mustard
8 brat buns, split

Steps:

  • Place the bratwurst in a 5-qt. slow cooker. In a large bowl, combine the sauerkraut, apples, bacon, brown sugar, onion and mustard; spoon over bratwurst. , Cover and cook on low until a thermometer inserted in the sausage reads 160°, 6-8 hours. , Place brats in buns; using a slotted spoon, top with sauerkraut mixture.

1 1/4 pounds red-skinned potatoes, cut into 1/2-inch chunks
3 tablespoons unsalted butter
6 fully cooked bratwurst, halved lengthwise (about 11/4 pounds)
2 Golden Delicious apples, cut into 1/2-inch chunks
Freshly ground pepper
1 bunch scallions, chopped
1 tablespoon chopped fresh sage
1 tablespoon apple cider vinegar
1 tablespoon honey
1/4 cup sour cream
1 tablespoon grainy mustard
1 cup sauerkraut, drained, rinsed and warmed

Steps:

  • Preheat the oven to 250 degrees F. Bring a large saucepan of salted water to a boil; add the potatoes and cook until just tender, about 5 minutes. Drain and pat dry.
  • Meanwhile, melt 1 tablespoon butter in a large skillet over medium heat. Add the bratwurst and cook, turning, until browned, about 4 minutes. Remove to a rimmed baking sheet and keep warm in the oven.
  • Add 1 tablespoon butter to the skillet along with the potatoes and apples; toss. Season with 3/4 teaspoon salt and a few grinds of pepper. Increase the heat to medium high and cook, tossing occasionally, until the potatoes and apples are golden brown and tender, 8 to 10 minutes. Add the scallions and sage and cook until the scallions are wilted, about 2 minutes. Add the vinegar, honey and the remaining 1 tablespoon butter. Cook, stirring, until the potatoes and apples are glazed, about 1 more minute.
  • Mix the sour cream with the mustard in a small bowl. Serve the bratwurst with the potatoes and apples, sauerkraut and sour cream mixture.

After reviewing several other bratwurst and sauerkraut recipes, I found that none of them fit what I wanted, so I made this up, and it was delicious. Perhaps someone else looking for that good, simply bratwurst and sauerkraut recipe will find this useful.

1 lb uncooked bratwurst
1 lb yukon gold potato, in 1 . 5 inch chunks
1 onion, in 1 inch chunks
1 (14 ounce) can sauerkraut
1/2 cup water
1 teaspoon fresh ground black pepper
1 teaspoon dried parsley
sour cream or mustard

Steps:

  • Place potatoes in the bottom of the crockpot, followed by onion.
  • Place whole (not cut up!) bratwurst over top of the onion and potatoes.
  • Spoon sauerkraut over bratwurst, and then pour water over the sauerkraut.
  • Sprinkle with black pepper and parsley.
  • Cover with crock pot lid and cook on low for 8-10 hours.
  • Serve with sour cream and/or mustard.
