For a vegan version, replace the chicken broth with vegetable broth. -Jennifer Machado, Alta, California

Tips:

  • Choose the right butternut squash: Look for a squash that is firm, heavy for its size, and has a deep, orange color. Avoid squash with blemishes or soft spots.
  • Roast the squash before cooking: Roasting the squash brings out its natural sweetness and flavor. To roast the squash, cut it in half lengthwise, scoop out the seeds, and drizzle with olive oil. Roast the squash cut-side down on a baking sheet at 400°F for 30-40 minutes, or until the flesh is tender.
  • Use a good quality broth: The broth is the base of the soup, so it's important to use a good quality broth. Look for a broth that is low in sodium and made with real ingredients.
  • Add some spice: Butternut squash soup can be bland, so don't be afraid to add some spice. A little bit of cayenne pepper, chili powder, or cumin can go a long way.
  • Garnish the soup: A few simple garnishes can really elevate the look and taste of the soup. Try adding a dollop of sour cream, a sprinkle of chopped cilantro or chives, or a drizzle of olive oil.

Conclusion:

Butternut squash soup is a delicious and easy-to-make soup that is perfect for a cold weather meal. It is also a great way to use up leftover butternut squash. With a few simple ingredients and a little bit of time, you can have a delicious and nutritious soup that the whole family will enjoy.
