6 cups sweet onions, thinly sliced (about 1 2/3 pounds)
2 teaspoons minced fresh garlic
2 tablespoons brown sugar
1 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon black pepper
2 lbs round roast or 2 lbs steak, trimmed of all fat
2 tablespoons balsamic vinegar
1/3 cup beef broth

  • Cover and cook on low for 8 hours.
  • Slice beef across the grain.
  • Spoon onions atop sliced beef.

Tips:

  • Choose the right onions: Yellow or white onions are ideal for caramelizing, as they have a higher sugar content than other varieties.
  • Slice the onions thinly: This will help them caramelize evenly.
  • Use a large skillet: This will give the onions plenty of room to spread out and caramelize.
  • Cook the onions over low heat: This will help them caramelize slowly and evenly.
  • Stir the onions occasionally: This will help to prevent them from sticking to the pan and burning.
  • Add a little bit of fat: This will help to keep the onions from drying out.
  • Add some seasonings: Salt, pepper, and a pinch of sugar are all good options.
  • Cook the onions until they are golden brown: This can take anywhere from 30 minutes to an hour.
