1 onion, finely chopped
½ teaspoon salt
¼ teaspoon dried thyme
¼ teaspoon ground black pepper
2 tablespoons dried parsley flakes
6 large fresh mushrooms, thinly sliced

½ cup grated Parmesan cheese

Steps:

  • Place the chicken strips, chicken broth, white wine, onion, salt, thyme, black pepper, and parsley into a slow cooker, and set the cooker on Low. Cover, and cook for about 5 hours, then raise setting to High. Stir in the mushrooms; mix the cornstarch and water together in a small bowl, and stir the mixture into the slow cooker. Recover, and cook until sauce is thickened, about 20 more minutes.

Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 12 minutes. Drain well in a colander set in the sink.

Number Of Ingredients 7

1 1/2 pounds chicken thighs, cut into 1-inch pieces
1 cup chopped onion
1 1/2 teaspoons Italian seasoning
1/2 teaspoon salt
1/4 cup heavy whipping cream
1 package cream cheese, cut into 1/2-inch cubes
1/4 cup shredded Parmesan cheese

Steps:

  • Spray slow cooker with cooking spray. Add chicken, onion, Italian seasoning and salt to slow cooker. Cover; cook on high heat setting 3 to 4 hours.
  • Stir in whipping cream and cream cheese. Cover; cook 10 to 12 minutes or until cheese is melted.
  • Sprinkle with Parmesan cheese upon serving.

Tips:

  • To save time, use pre-cooked chicken. Shredded rotisserie chicken is a great option.
  • Use a variety of mushrooms for a more flavorful dish. Some good options include cremini, shiitake, and oyster mushrooms.
  • If you don't have white wine, you can substitute chicken broth. However, white wine will add a more complex flavor to the dish.
  • Be careful not to overcook the pasta. It should be cooked al dente, or slightly firm to the bite.
  • Serve chicken tetrazzini immediately, or it will start to thicken. If you need to make it ahead of time, you can cook it and then reheat it in the oven or microwave before serving.

Conclusion:

Chicken tetrazzini is a classic comfort food dish that is perfect for a weeknight meal. It is easy to make and can be tailored to your own taste preferences. With its creamy sauce, tender chicken, and flavorful mushrooms, chicken tetrazzini is sure to be a hit with your family and friends.
