Time 4h20m

Yield 4 to 6 servings

Number Of Ingredients 11

3/4 cup walnuts, toasted and chopped
1/2 cup chopped dried cranberries
1/3 cup packed light brown sugar
1/3 cup rolled oats
3 tablespoons unsalted butter, cut into small pieces
1 tablespoon fresh lemon juice
1/2 teaspoon ground cinnamon
Kosher salt
4 large or 6 medium firm baking apples (such as Rome, Golden Delicious or Honey Crisp)
1 cup apple cider
Vanilla ice cream and pure maple syrup, for serving

Steps:

  • Combine the walnuts, cranberries, brown sugar, oats, butter, lemon juice, cinnamon and 1/2 teaspoon salt in a small bowl and squeeze together until a wet and sandy mixture is formed.
  • Scoop the core out of each apple with a melon baller, taking care not to scoop completely through to the bottom or the sides. Stuff each apple with some of the cranberry-walnut mixture. Place the apples in the slow cooker insert and pour in the apple cider. Cover and cook on low until the apples are tender but still slightly firm, 3 to 4 hours depending on the size and type of apple. (If your apples are on the smaller size, check after 2 hours; they may cook faster.)
  • Serve each apple whole or cut in half in a bowl with a scoop of ice cream and a drizzle of maple syrup.

BAKED APPLE WITH CRANBERRIES

Baked Apple With Cranberries image

I had this for breakfast this morning. My internet was off and I couldn't look up baked apples so I made this one up. I enjoyed it so I thought I would post it. I used brown sugar substitute, but you can used regular brown sugar. I kept it low in both sweet and butter but you can add more if you want. I baked it in a toaster oven at 350°F for 30 minutes. If you use sweetened cranberries, I would cut back on the sugar. Substitute margarine for butter and this is a vegetarian recipe.

Tips:

  • Choose the Right Apples: For the best results, select firm, tart apples that hold their shape well when baked, such as Granny Smith, Honeycrisp, or Braeburn.
  • Prepare the Apples Properly: Before baking, core and peel the apples, leaving the bottoms intact so they can stand upright in the slow cooker.
  • Use Fresh Cranberries: Fresh cranberries provide a tart and tangy flavor to the dish. If you can't find fresh cranberries, frozen cranberries can be used instead.
  • Don't Overcrowd the Slow Cooker: Place the apples in the slow cooker in a single layer, making sure they are not touching each other. Overcrowding can prevent the apples from cooking evenly.
  • Add Spices and Sweetener: To enhance the flavor of the apples, add a mixture of spices such as cinnamon, nutmeg, and ginger. You can also add a sweetener like honey or brown sugar to balance the tartness of the cranberries.
  • Cook on Low and Slow: Cook the apples on low heat for 4-6 hours, or until they are tender and easily pierced with a fork. Cooking on low heat helps to preserve the shape and texture of the apples.
  • Serve Warm or Cold: Slow Cooker Cranberry Baked Apples can be served warm or cold. If you prefer a warm dessert, heat them up in the microwave or oven before serving. For a refreshing treat, chill the apples in the refrigerator and serve them cold.

Conclusion:

Slow Cooker Cranberry Baked Apples are an easy and delicious dessert that can be enjoyed all year round. With just a few simple ingredients and minimal effort, you can create a sweet and tart treat that is perfect for any occasion. Whether you serve them warm or cold, these baked apples are sure to be a hit with family and friends.
