3 tablespoons dry white wine
2 tablespoons cognac
1 1/2 teaspoons extra-virgin olive oil
1 1/2 teaspoons butter
1 whole chicken (3 to 3 1/2 lb), skin removed, cut into 8 pieces

1/8 teaspoon freshly ground pepper
40 cloves garlic (about 4 whole heads), peeled

CHICKEN WITH FORTY CLOVES OF GARLIC

Chicken with Forty Cloves of Garlic image

Provided by Ina Garten

Categories     main-dish

Time 1h40m

Yield 6 servings

Number Of Ingredients 11

3 whole heads garlic, about 40 cloves
2 (3 1/2-pound) chickens, cut into eighths
Kosher salt
Freshly ground black pepper
1 tablespoon unsalted butter
2 tablespoons good olive oil
3 tablespoons Cognac, divided
1 1/2 cups dry white wine
1 tablespoon fresh thyme leaves
2 tablespoons all-purpose flour
2 tablespoons heavy cream

Steps:

  • Separate the cloves of garlic and drop them into a pot of boiling water for 60 seconds. Drain the garlic and peel. Set aside.
  • Dry the chicken with paper towels. Season liberally with salt and pepper on both sides. Heat the butter and oil in a large pot or Dutch oven over medium-high heat. In batches, saute the chicken in the fat, skin side down first, until nicely browned, about 3 to 5 minutes on each side. Turn with tongs or a spatula; you don't want to pierce the skin with a fork. If the fat is burning, turn the heat down to medium. When a batch is done, transfer it to a plate and continue to saute all the chicken in batches. Remove the last chicken to the plate and add all of the garlic to the pot. Lower the heat and saute for 5 to 10 minutes, turning often, until evenly browned. Add 2 tablespoons of the Cognac and the wine, return to a boil, and scrape the brown bits from the bottom of the pan. Return the chicken to the pot with the juices and sprinkle with the thyme leaves. Cover and simmer over the lowest heat for about 30 minutes, until all the chicken is done.
  • Remove the chicken to a platter and cover with aluminum foil to keep warm. In a small bowl, whisk together 1/2 cup of the sauce and the flour and then whisk it back into the sauce in the pot. Raise the heat, add the remaining tablespoon of Cognac and the cream, and boil for 3 minutes. Add salt and pepper, to taste; it should be very flavorful because chicken tends to be bland. Pour the sauce and the garlic over the chicken and serve hot.

Time 1h50m

Pour the vermouth over them, sprinkle with the salt, pepper, and a dash or two of nutmeg, Lay the chicken pieces on top. Sprinkle the garlic cloves around and between the chicken pieces. Time 8h15m

Yield 1 pot, 6 serving(s)

Number Of Ingredients 7

3 -4 lbs chicken
1 large onion, sliced
1 tablespoon olive oil
2 teaspoons kosher salt
2 teaspoons paprika
1 teaspoon pepper
20 -40 garlic cloves, peeled, but intact

  • In a 6 quart slow cooker. Place onion slices on the bottom of the stoneware insert.
  • In a large mixing bowl, toss chicken parts with olive oil, salt, paprika, pepper, and all of the garlic cloves. Pour into slow cooker, on top of the onion.
  • Do not add water.
  • Cover and cook on low for 6-8 hours, or on high for 4-6. The longer you cook chicken-on-the-bone, the more tender it will be. If you use drumsticks, the ones on the side will brown and may stick to the sides of the crock, burning a bit. If this bothers you, you can rearrange them with tongs an hour before serving.

GARLIC-ROSEMARY SLOW COOKER WHOLE CHICKEN

Garlic-Rosemary Slow Cooker Whole Chicken image

Once you try making a whole chicken in the slow cooker, you'll never want to roast it the old way again. In the slow cooker you'll get the moistest, most fool-proof, and hands-off whole chicken that you'll ever make. This recipe uses generous amounts of rosemary and garlic that not only infuse into the chicken, but also season the potatoes that cook underneath the chicken for a savory one-pot meal.

Provided by fabeveryday

Categories     Meat and Poultry Recipes     Chicken     Whole Chicken Recipes

Time 8h10m

Yield 6

Number Of Ingredients 6

1 ½ pounds potatoes, peeled and cubed
1 medium onion, chopped
1 (4 to 6 pound) whole roasting chicken
6 cloves garlic, halved lengthwise
2 tablespoons rosemary
freshly cracked salt and pepper to taste

Steps:

  • Place potatoes in the bottom of a slow cooker. Add onion over the top of the potatoes.
  • Remove the chicken parts inside the cavity and pat the outside of the chicken dry. Slice deep, garlic clove-width slits into your chicken with a knife. Make 4 cuts on each side of the chicken, and 1 in each of the drumsticks. Stick a sliver of garlic deep into each cut. Place the remaining chunks of garlic into the cavity.
  • Starting on the back of the chicken, season generously with about 1/2 of the rosemary and cracked salt and pepper. Add some seasoning inside the chicken's cavity as well. Flip the chicken and place it breast side up in the slow cooker on top of the potatoes and onions. Season the top of the chicken generously with the remaining rosemary and more cracked salt and pepper.
  • Cook on Low until the chicken is cooked through completely and the juices run clear when the chicken is cut, 8 to 10 hours, depending on the size. Serve with the potatoes and onions from the pot.

SLOW COOKER CHICKEN WITH 20 CLOVES OF GARLIC

Slow Cooker Chicken With 20 Cloves of Garlic image

This weeknight-friendly version of the French classic - chicken with 40 cloves of garlic - has half the amount of garlic, because a slow cooker doesn't get quite hot enough to mellow out 40 whole cloves. This dish cooks on high for three hours, but you can lengthen the cook time to six hours using the low heat setting. In that case, cut the garlic further to 15 cloves, because it may taste a bit stronger when cooked at that lower temperature. The beans end up pleasantly soupy, in a sauce rich with chicken juices and wine. The herbs stirred in at the end impart a welcome freshness. This is best served in shallow bowls, with good bread on the side.

Time 4h

Yield 4 servings

Number Of Ingredients 12

1 (28-ounce) can or 2 (14-ounce) cans cannellini beans, drained
20 garlic cloves (about 2 heads of garlic), smashed
1/3 cup white wine
2 tablespoons olive oil
1 tablespoon white wine vinegar
2 fresh thyme sprigs or 1/2 teaspoon dried thyme
1/2 teaspoon red-pepper flakes
Kosher salt and black pepper
2 pounds bone-in, skin-on chicken thighs (4 to 6 large thighs)
1/2 lemon, juiced (about 1 tablespoon)
2 scallions, trimmed, white and light green parts thinly sliced
1/2 cup chopped fresh flat-leaf parsley

Steps:

  • Combine the beans, garlic, wine, oil, vinegar, thyme and red-pepper flakes in a 6- to 8-quart slow cooker. Season lightly with salt and generously with pepper. Season the chicken thighs all over with salt and pepper, then nestle them in an even layer on top of the beans, skin-side up. Cover and cook on high for 3 hours or low for 6 hours.
  • Line a sheet pan with foil and heat a broiler. Using tongs, remove the chicken thighs from the slow cooker, place them on the foil, skin-side up, and broil for 2 to 4 minutes, rotating once, until the chicken skin is golden and caramelized in spots.
  • Stir the lemon juice, scallions and parsley into the beans. Serve the beans in bowls, and top with the chicken.

SLOW-COOKER CHICKEN WITH 20 CLOVES OF GARLIC

Slow-Cooker Chicken with 20 Cloves of Garlic image

Developing this recipe -- a riff on the French bistro classic -- taught us a thing or two about how the slow, steady, moist heat of the slow cooker really intensifies flavors. When we tried the traditional 40-clove recipe, the garlic flavor was so strong, we cut the number in half (and we love garlic!). This recipe appears in our cookbook "Martha Stewart's Slow Cooker" (Clarkson Potter).

Tips:

  • Choose the right chicken: For this recipe, boneless, skinless chicken breasts or thighs work best. They'll cook evenly and stay moist in the slow cooker.
  • Use fresh garlic: Don't skimp on the garlic! Fresh garlic will give your chicken the best flavor. If you don't have fresh garlic, you can use 1 teaspoon of garlic powder.
  • Don't crowd the slow cooker: Make sure there is enough space between the chicken breasts or thighs so that they can cook evenly. If you crowd the slow cooker, the chicken will steam instead of roast.
  • Cook the chicken on low: Cooking the chicken on low for 6-8 hours will give it time to become tender and fall apart. If you cook the chicken on high, it will cook too quickly and become dry.
  • Let the chicken rest before serving: Once the chicken is cooked, let it rest for 10 minutes before serving. This will help the juices redistribute throughout the chicken and make it even more flavorful.

Conclusion:

This slow cooker forty garlic chicken is an easy and delicious weeknight meal. It's perfect for busy families or anyone who wants a flavorful meal without a lot of fuss. The chicken is tender and juicy, and the garlic sauce is rich and flavorful. Serve it with your favorite sides, such as mashed potatoes, rice, or roasted vegetables.
