2 tsp salt
4 c chicken stock
15 oz can diced tomtoes
15 oz can black beans drained
1 c heavy cream
8 oz each shredded monterey jack cheese and shredded cheddar cheese.
TOPPINGS
cheddar cheese
sour cream
tortilla chips
fresh cilantro

Steps:

  • 1. Place the chicken, onion, garlic and spices in a slow cooker. Mix it well then pour the chicken stock over the top. Slow cook on low for 6 hours. Remove the chicken and shred into pieces and add back to the slow cooker.
  • 2. Add the diced tomatoes, black beans and heavy cream. Cook 1 hour. Add the cheese and cook 30 minutes.
  • 3. Top with toppings of choice and serve

Tips:

  • Use a variety of beans: Black beans, pinto beans, and kidney beans are all great options for nacho soup. You can also use a mix of different beans.
  • Don't overcook the beans: Beans should be cooked until they are tender but not mushy. Overcooked beans will make your soup too thick and pasty.
  • Use a flavorful broth: Chicken broth or vegetable broth are both good choices for nacho soup. You can also use a combination of the two.
  • Add your favorite vegetables: Onions, peppers, and tomatoes are all great additions to nacho soup. You can also add other vegetables, such as corn, zucchini, or squash.
  • Season the soup to taste: Nacho soup should have a slightly spicy flavor. You can add chili powder, cumin, and cayenne pepper to taste.
  • Top the soup with your favorite nacho toppings: Shredded cheese, sour cream, guacamole, and salsa are all classic nacho toppings. You can also add other toppings, such as black olives, chopped cilantro, or jalapenos.

Conclusion:

Nacho soup is a delicious and easy-to-make meal that is perfect for a busy weeknight. It is also a great way to use up leftover beans and vegetables. With its variety of flavors and textures, nacho soup is sure to be a hit with everyone at your table. So next time you are looking for a quick and easy meal, give nacho soup a try.
