Eight simple ingredients is all this hearty and delicious Tex-Mex soup calls for... and we love it! Prep it before you head to work and come home to this spicy soup is packed with chunks of chicken, potatoes and corn, and flavored with cumin. A quick 15 minutes gets all the ingredients ready and the slow cooker does the rest. The sweetness of the potatoes play against the mild heat of the chiles in the tomatoes. Dial up the heat with the hot variety of tomatoes with chiles. Add some chopped green onion at the end for a little burst of color and touch of fresh crunch. Serve with a simple green salad for a complete meal. Leftovers are great for a portable lunch. If corn is in season, use fresh in place of frozen.

0.75 pound(s) Uncooked boneless skinless chicken breast(s) cut into 1-inch cubes
2 medium Uncooked sweet potato(es) peeled, cut into 1-inch cubes
1 large Uncooked onion(s) chopped
29 oz Canned diced tomatoes salsa-style with chiles, undrained
14.5 oz Fat free chicken broth
1 tsp Dried oregano
0.5 tsp Ground cumin
1.5 cup(s) Frozen corn kernels not thawed

Steps:

  • Mix all ingredients, except corn, in a 4-quart or larger slow cooker; cover and cook on low heat for 6 hours.
  • Stir in corn and cover slow cooker; cook on high heat until chicken is no longer pink in center and vegetables are tender, about 30 minutes more. Yields about 1 1/4 cups per serving.

I have not tried this yet, just got it from a friend who has been making it weekly and says it's easy and very filling, with 3 1/2 WW points per 1 cup serving. I can't guarantee that it's "Weight Watchers". It looks like a basic soup that other vegetables could be added to (such as broccoli or cauliflower) to add nutrients without adding a lot of calories. Note: after seeing the calorie and fat count on this, it doesn't look like a weight watchers' item! However, I'm keeping it on here for a filling, easy soup that I'd like to try.

26 -30 ounces frozen hash browns (plain)
2 (14 ounce) cans nonfat chicken broth
1 (10 1/2 ounce) can 98% fat-free cream of chicken soup
1/4 cup chopped onion
1/4 teaspoon pepper
1 (8 ounce) package low-fat cream cheese (1/3 less fat)
1 cup nonfat milk

Steps:

  • Add first 5 ingredients to crock pot and cook on high for one hour. Stir and then turn to low, cook for another hour.
  • Add cream cheese and cook another 30 minutes or until cheese can be stirred into mixture. Add milk and cook 10-15 minutes longer.
  • Optional: Garnish with chopped green onion and bacon bits (add 1 point for garnish).
  • Variation: Use frozen Country potatoes or Potatoes O'Brien in place of plain hash browns.

1 (26 to 30-ounce) bag frozen hash browns
2 (14-ounce) cans non-fat chicken broth
1 (10.75-ounce) can 98% fat-free cream of chicken soup
1/4 cup onion, chopped
1/4 teaspoon black pepper
1 (8-ounce) package low-fat cream cheese
1 cup fat-free milk
Green onions, chopped, to garnish
Bacon bits, optional, to garnish

Steps:

  • Add hash browns, chicken broth, chicken soup, onion, and black pepper to your slow-cooker and cook on high for an hour. Stir, then turn your slow-cooker to low for another hour. Add cream cheese, and cook another 1/2 hour or until cheese can be stirred into the mixture. Add milk and cook 10 to 15 minutes longer. Garnish with chopped green onion and bacon bits. Add 1 WW point for garnish. VARIATIONS: Use frozen country potatoes or Potatoes O'Brien in place of the hash browns.

7 cups diced potatoes (about 4 medium)
1 cup diced onion (about 1 medium)
1 large carrot, chopped
2 cups ham, diced
5 cups hot water
1 Knorr Chicken Bullion cube (extra large size that makes 1-quart broth or 4 small cubes that make 1 cup each)
1 cup 2% milk
1/2 cup sour cream
Salt and Pepper, to taste

Steps:

  • Add diced potatoes, onion, carrot, and ham to a crock pot. Dissolve chicken bullion in 5 cups hot water, then add this to the crock pot also. Cook on low 7 hours, or high 3 hours. Then add milk and sour cream. Stir and cook an additional 15 minutes. Add salt and pepper to taste. Makes twelve 1-cup servings. If you'd like a thicker soup, just before adding milk and sour cream, remove 2-3 cups of the potatoes and slightly mash, then return the mashed mixture to the crock pot. 4 (8 ounce) cans fat free chicken broth
50 ounces potatoes, diced (about 3 lbs.)
1/2 onion, diced
4 slices bacon (crisply cooked)
8 ounces Velveeta reduced fat cheese product
1/4 cup fat free sour cream
2 tablespoons flour
3 tablespoons water

Steps:

  • Combine broth and potatoes. Cover and cook about 20 minutes, until potatoes are cooked through.
  • As potatoes are cooking, saute onions then add to cooking potatoes.
  • When the potatoes are soft, stir in cheese and sour cream, and simmer until the cheese is melted.
  • Thicken with the flour and water mix.
  • Serve and enjoy.
