MEXICAN STYLE SHREDDED PORK

Mexican Style Shredded Pork image

This is an amazing shredded pork recipe similar to what you would eat in a rice bowl (or in an enchilada) at a Mexican restaurant. It is easy to prepare and simmers in a slow cooker all day, ready to enjoy when you arrive home. I serve it over rice (laced with lime juice and fresh cilantro), Cheddar cheese, salsa, guacamole, and a dollop of sour cream. Amazing!

SOUTHWEST CROCK POT PORK TENDERLOIN

Southwest Crock Pot Pork Tenderloin image

This pork tenderloin recipe is a wonderful treat and is great when served with rice, beans and tortillas. I highly recommend using the New Mexico Green Chiles, if you happen to have them in your area. If not, you can substitute jalapenos. If you find them frozen or in the can, they are precooked so no need to do anything but put them in the crock pot. If you happen to use fresh chiles or jalapenos, you will need to cook them first.

Tips:

  • Choose the right cut of pork: Pork shoulder or pork butt are the best cuts for pulled pork because they are well-marbled and have a lot of connective tissue, which breaks down during cooking and makes the meat tender and juicy.
  • Season the pork well: Be generous with the spices and seasonings when preparing the pork. This will help to create a flavorful and delicious dish.
  • Cook the pork on low heat: Slow cooking is the best way to achieve tender and flavorful pulled pork. Cook the pork on low heat for at least 8 hours, or until it is fall-apart tender.
  • Shred the pork with forks: Once the pork is cooked, shred it with two forks. This will help to create a tender and juicy texture.
  • Serve the pulled pork with your favorite sides: Pulled pork can be served with a variety of sides, such as coleslaw, mashed potatoes, or cornbread.

Conclusion:

Slow cooker southwest shredded pork is a delicious and easy-to-make dish that is perfect for a casual meal or a party. The pork is tender and juicy, and the flavor is out of this world. Serve it with your favorite sides, and you're sure to have a hit on your hands.
