2 lbs red potatoes, cut into wedges

3 sprigs dill
2 -3 sprigs fresh thyme
1 sprig fresh rosemary
1 sprig fresh sage
1 lemon, zest of, peeled off in large strips
6 whole black peppercorns
4 whole allspice
4 whole coriander seeds
2 whole cloves
1/2 teaspoon cumin seed
1 whole cardamom pod, cracked
1 soft hard-boiled egg, room temperature
1 lemon, juice and pulp of
1/2 lemon, zest of, minced or grated
