1/2 cup water
1 small stalk celery
1/2 teaspoon dried thyme leaves
1 dried bay leaf
2 turkey thighs (about 1 1/2 pounds)
1 envelope (1 1/4 ounces) Alfredo sauce mix
1 can (10 3/4 ounces) condensed 98% fat-free cream of mushroom soup
1 package (9 ounces) frozen chopped broccoli, thawed and drained
8 ounces uncooked rotini pasta
1/2 cup grated Parmesan cheese

Steps:

  • Pour broth and water into 3 1/2- to 4-quart slow cooker. Add celery, thyme and bay leaf. Top with turkey.
  • Cover and cook on low heat setting 6 to 8 hours or until turkey is tender. Remove turkey, celery and bay leaf; discard celery and bay leaf.
  • Increase heat to high setting. Mix sauce mix (dry) and soup; stir into slow cooker. Stir in broccoli. Cover and cook about 30 minutes or until thickened.
  • Cook pasta as directed on package. While pasta is cooking, remove turkey meat from bones and cut into pieces; discard bones.

1 cup finely chopped sweet onion
4 cloves garlic, finely chopped (2 teaspoons)
2 medium yellow bell peppers, cut into 1/2-inch pieces
2 medium red bell peppers, cut into 1/2-inch pieces
1 jar (26 oz) tomato pasta sauce
4 1/2 cups uncooked rotini pasta (12 oz)
6 tablespoons shredded Parmesan cheese

Steps:

1 (16 ounce) package rotini pasta
½ pound lean ground beef
1 teaspoon diced onion
1 teaspoon salt
¼ teaspoon ground black pepper
1 (28 ounce) jar spaghetti sauce
3 cups shredded mozzarella cheese

Steps:

  • In a large pot cook rotini pasta in boiling salted water until al dente. Drain.
  • Cook ground turkey or beef in medium skillet until brown. Add the diced onion, salt and pepper. Mix in half of the jar of spaghetti sauce.
  • In a large bowl add the browned beef mixture to the drained pasta and stir in the second half of the of spaghetti sauce. Pour mixture into a 2 quart baking dish. Cover with aluminum foil.

This can easily be adapted to whatever you happen to have in the house, since that's how I made it up tonight for dinner. I'm sure it would also work with ground beef (omit the olive oil). Most people will probably have to add some salt, but we've been on a low sodium diet for so long that what came in the canned goods was more than plenty for us. You could easily spice this up by using your favourite hot sauce or some Cajun seasoning in place of the chili powder (or in addition to it).

1 tablespoon olive oil
1 lb ground turkey
1/2 cup onion, chopped
1/2 teaspoon garlic powder
1 teaspoon chili powder
1 (15 1/2 ounce) can kidney beans
1 (4 ounce) can mushrooms
1 (6 ounce) can sliced black olives
2 cups cooked whole wheat rotini
8 ounces extra-sharp cheddar cheese, grated
1 (26 ounce) jar spaghetti sauce (I used onion and mushroom)
1/2 cup grated parmesan cheese (from a can)

Steps:

  • Preheat oven to 350F; heat olive oil in a large skillet.
