DELIGHTFUL INDIAN COCONUT VEGETARIAN CURRY IN THE SLOW COOKER

Delightful Indian Coconut Vegetarian Curry in the Slow Cooker image

Here's a delightful dish I adapted from a non-vegetarian recipe. It's extremely easy to prepare in the crock pot. Deliciously creamy, it can be served by itself, with rice, or with steamed soft tortillas. Also makes a good samosa filling. It has a nice touch of hot pepper to it.

Tips:

- Use a variety of vegetables to add flavor and texture to your curry. Some good options include carrots, potatoes, onions, bell peppers, and broccoli. If you're using frozen vegetables, make sure to thaw them before adding them to the slow cooker. - To make a thicker curry, add a cornstarch or flour slurry to the pot. A slurry is a mixture of equal parts cornstarch or flour and water. Stir the slurry into the curry until it has thickened to your desired consistency. - Serve the curry with rice, naan bread, or your favorite side dish. You can also garnish it with fresh cilantro, chopped nuts, or yogurt. - If you want a spicier curry, add more curry powder or cayenne pepper. You can also add a serrano or jalapeño pepper to the pot. - If you don't have a slow cooker, you can make this curry on the stovetop. Just simmer it over medium heat for about 30 minutes, or until the vegetables are tender.

Conclusion:

This slow cooker vegetarian curry is a delicious, healthy, and easy-to-make meal. It's perfect for a weeknight dinner or a potluck party. You can customize it to your own taste by adding different vegetables, spices, and garnishes. So get creative and enjoy!
