- Heat a skillet over medium-high heat and coat with cooking spray. Quickly brown the pork chops on each side. Set aside.
- Arrange sweet potato slices in the bottom of a 3 to 4 quart slow cooker. Cover with the onion slices, then the apple slices. Sprinkle brown sugar, nutmeg and salt over the apples, and grind a little pepper. Place the pork chops on top of the pile, and cover with sauerkraut. Cover, and cook on Low for about 5 hours. It can go an extra hour without drying out though.

- Salt and pepper the chops and brown them in hot oil or butter, about 3 minutes per side. Set aside.
- Add the apple and onions to the same skillet and cook for about 5 minutes, until the onion starts to look golden.
- Add the wine and stir, scraping up all the browned bits, and cook for an additional 3 minutes.
- Stir in the sauerkraut, and place the chops on top, including any juices that have collected. Cover the skillet, lower the heat and cook until the chops are done, about 7 minutes, depending on thickness. Do not overcook.
- Note1: I've also made this successfully with chardonnay, but riesling is the best.
- Note2: Sauerkraut packed in plastic bags and sold in the refrigerator case tastes much better than the canned.

This is not a recipe for a true sauerkraut lovers as it is very mild re the sauerkraut. Hey you non "Kraut" lovers you may love it! Instead of tomato juice you may substitute wine, chicken stock or apple juice, This recipe would cook nicely in a crock pot too I think. I would layer it the same and cook on low for 6 hours. - Mix the potatoes and the kraut.
- Place half the sauerkraut/potato mixture in a Pyrex pie plate.
- Spread 1 1/2 tbsp of mustard over the sauerkraut.
- Place the chops on the sauerkraut.

- Cover with remaining sauerkraut/potato mixture.
- Season with salt & pepper.
- Put the pat of butter on top.

- Place a piece of foil in a baking dish large enough to hold the chop and other ingredients. The foil must be large enough to seal over the top of the chop
- Place half the apple sauce in the bottom of the dish.
- Add half of the sauerkraut.
- Add half the potato slices.
- Season with pepper.
- Coat one side of the chop with half the mustard and lay it, mustard side down on the potato slices.
