Provided by Giada De Laurentiis

Time 15m

Yield 4 to 6 servings

Number Of Ingredients 6

1 English cucumber
Kosher salt
2 tablespoons sour cream
2 tablespoons chopped fresh dill
8 ounces smoked Irish salmon
Toasted pumpernickel bread, for serving

Steps:

  • Thinly slice the cucumber on a mandoline and place in a colander over a bowl. Season with 1/2 teaspoon salt and allow the cucumbers to sit for 5 minutes. Squeeze out the excess water and place the cucumbers in a clean medium bowl. Add the sour cream, dill and 1/4 teaspoon salt and stir with a rubber spatula to combine.
  • Lay the smoked salmon on one half of a platter lightly, so there is movement to the plate, leaving open the other half of the platter. Pile the cucumber mixture on a quarter of the platter or spoon into a bowl that fits on the platter. Serve the toasted pumpernickel bread on the other quarter of the platter.

SHRIMP AND SMOKED SALMON SMORREBROD WITH LEMON CUCUMBERS

Shrimp and Smoked Salmon Smorrebrod With Lemon Cucumbers image

My new sandwich obsession, the Danish Smorrebrod, a wonderful openface treat; this one's loaded with seafoods and fresh veggies on a slice of rye bread. This also makes a delicious appetizer, and I make extra of the cucumbers to enjoy in salads as well.

Time 30m

Yield 2 serving(s)

Number Of Ingredients 11

1/2 cucumber, peeled
1/2 teaspoon salt
1 teaspoon sugar
2 tablespoons lemon juice
4 slices rye bread (I like pumpernickel the best)
3 -4 tablespoons unsalted butter or 3 -4 tablespoons cream cheese, softened
2 radishes, thinly sliced
4 slices smoked salmon
8 shrimp, cooked, peeled and sliced lengthwise
dill, to garnish
lemon wedge, to garnish

Steps:

  • Lightly "pickle" the cucumber by finely slicing it and tossing it with the salt, sugar and lemon juice. Set aside for at least 30 minutes.
  • Meanwhile, spread the rye bread slices with the butter or cream cheese. Arrange the radish slices on top, then top with folds of smoked salmon. Drain the cucumber and layer this on top of the salmon. Top with the cooked shrimp.
  • Sprinkle fresh dill over the smorrebrod and serve with lemon wedges for squeezing. Serve 2 smorrebrod per person.

Tips:

  • Choose the right cucumbers: English cucumbers are the best choice for this recipe because they have a thin skin and few seeds. If you use a different type of cucumber, you may need to peel it and remove the seeds.
  • Slice the cucumbers thinly: This will help them absorb the marinade more easily.
  • Use a good quality smoked salmon: The quality of the smoked salmon will make a big difference in the taste of the dish. Look for smoked salmon that is firm and has a deep red color.
  • Make the marinade ahead of time: This will give the flavors time to meld together.
  • Chill the cucumbers before serving: This will help them stay crisp and refreshing.

Conclusion:

Smoked salmon cucumbers are a delicious and easy-to-make appetizer that is perfect for any occasion. They are light and refreshing, and the combination of smoked salmon, cucumbers, and dill is a classic flavor combination. If you are looking for a healthy and delicious snack or appetizer, this recipe is a great choice.
