  • In a large skillet, heat the olive oil over medium-high heat. Add the onion and sauté until translucent, but not browned. Add the smoked salmon and continue cooking just until the salmon turns opaque, 1 to 2 minutes. Pour in the cream and add the capers. Taste and adjust seasoning with salt and pepper. Be careful how much salt you add because the smoked salmon and capers are both salty. Add the pasta and toss to coat. Over the years I have tweeked it to the recipe it is today. I have used fresh salmon in place of smoked salmon when I have not been able to get smoked salmon, and it was very good as well. Served with a salad it makes a very lovely meal.

1/4 cup olive oil
1 cup mushroom, sliced
2 shallots, sliced thinly
1 garlic clove, minced
1 pinch cayenne
1/3 lb smoked salmon, cut into 2-inch pieces
1/4 cup white wine
1 cup heavy cream
2 tablespoons lemon juice
1 tablespoon lemon zest, grated
3 tablespoons capers, drained
1 teaspoon parsley
1 lb linguine or 1 lb spaghetti
1/2 cup parmesan cheese, freshly grated
salt and pepper

Steps:

  • Cook Pasta as directed. Drain.
  • Meanwhile, in a large skillet, heat oil. Add mushrooms, shallots, garlic and cayenne. Saute until veggies are tender.
  • Add white wine and bring to boil. Add cream and bring to boil. Let simmer for 3minutes.
  • Add lemon juice, lemon zest and salmon. Bring to boil and let simmer 1 to 2 minutes.

3 garlic cloves, minced
1 1/2 cups 2% low-fat milk
2 tablespoons cornstarch
1/4 cup mozzarella cheese, shredded
1/4 cup parmesan cheese, grated
1/4 teaspoon pepper
1 pinch saffron thread, crushed
4 ounces bay scallops
1/3 cup green onion, sliced
1 tablespoon capers, drained
2 ounces lox, cut into strips
8 ounces spinach fettuccine, cooked and drained

Steps:

  • Heat oil in a medium saucepan over medium heat.
  • Add garlic and cook 30 seconds.

Steps:

  • Cook fettuccine to desired doneness as directed on package. Drain; cover to keep warm.
  • Meanwhile, place 1/3 cup water in medium saucepan. Bring just to a boil over medium heat. Reduce heat to medium-low. Add asparagus; cover and cook 4 to 6 minutes or until tender. Do not drain. Add Alfredo sauce and salmon; cover and cook an additional 2 to 3 minutes or just until thoroughly heated.
  • Place fettuccine in large serving bowl. Add asparagus mixture; toss to coat.

6 cups cooked pasta (we like penne or the med. shells for this)
120 g smoked salmon, finely sliced
3/4 cup garlic mayonnaise
1 cup lettuce, shredded
3/4 cup cucumber, peeled & finely sliced (we use English cukes)
1/4 cup sweetcorn
1 carrot, grated
1 red bell pepper, finely diced
1/4 teaspoon paprika
1/2 teaspoon mixed Italian herbs
salt and black pepper
1 teaspoon lemon juice
2 eggs, hardboiled & chopped
2 small pickled cucumbers, finely sliced

Steps:

  • in a large bowl or pot, mix the mayo with the salmon & seasonings.

1/2 cup sweet onion, finely diced
1 garlic clove, minced
1 pinch red pepper flakes
1 (8 ounce) package cream cheese
1/2 cup parmesan cheese, grated
1/4 cup monterey jack cheese, grated
1/2 cup unsalted butter
1/4 cup milk
1/4 cup buttermilk
1/4 teaspoon dried basil
1/2 cup fresh spinach, torn
1 tomatoes, seeded and cut
1/2 cup smoked salmon, broken into little pieces

Steps:

  • Bring a large pot of lightly salted water to a boil.
  • Add pasta and cook for 10 to 15 min or until al dente; drain.
  • Meanwhile melt the butter in a large skillet and add onion, garlic, and red pepper flakes. Cook over medium heat until onions are translucent. Reduce heat to low and add in milks, cheeses, and basil and stir over low heat until smooth and creamy about 10 to 15 minutes. Add smoked salmon and spinach and toss until heated through. Add cooked pasta and tomatoes and toss to combine. Add a bit of starchy pasta water if needed to make the sauce a good consistency. Season with salt and pepper to taste.
