1 pound smoked sausage, cut into 1 inch pieces
1 tablespoon margarine
2 zucchini, cut lengthwise then in half
1 tablespoon instant minced onion
½ teaspoon garlic salt
¼ teaspoon dried oregano
¼ teaspoon ground black pepper
2 tomatoes, chopped

Steps:

  • In a skillet over medium heat, brown the sausage. Remove sausage from skillet and set aside. Add margarine, zucchini, and onion to the skillet and cook until zucchini is crisp and tender. Return the browned sausage to the skillet and add garlic salt, oregano, and black pepper. Cook until all ingredients are hot. Add chopped tomatoes on top of the ingredients.

2-1/2 cups uncooked bow tie pasta
1 package (16 ounces) Eckrich® Smoked Sausage, cut into 1/2-inch slices
1 tablespoon olive oil
2 medium zucchini, halved lengthwise and sliced
1/2 cup chopped onion
1 can (14-1/2 ounces) diced tomatoes, undrained
1/2 teaspoon garlic salt
1/4 teaspoon dried oregano
1/4 teaspoon pepper
1/4 cup grated Parmesan cheese, optional

Steps:

  • Cook pasta according to package directions. Meanwhile, cook sausage in a large skillet over medium heat until browned, about 5 minutes. Remove from the skillet; set aside., To the same skillet, add oil, zucchini and onion; cook and stir until vegetables are crisp-tender, about 5 minutes. Stir in sausage, tomatoes, garlic salt, oregano and pepper. Cook, uncovered, until heated through, about 10 minutes, stirring occasionally., Drain pasta and place on serving platter. 1/2 pound fully cooked smoked Polish sausage, cut into 1/2-inch diagonal slices
1 cup chopped onion
1 cup sliced celery

24 ounces cheese ravioli
2 teaspoons olive oil
4 links smoked sausage, slice (I used Johnsonville Smoked beef links)
1 1/2-2 cups zucchini, thinly sliced in half moons
1 large yellow sweet onion, thinly sliced
1/2 teaspoon garlic salt
1/4 teaspoon black pepper
1 (16 ounce) jar alfredo sauce (I use Bertoli Four Cheese Rosa)
4 slices provolone cheese
1/4 cup parmesan cheese, fresh grated

  • Preheat oven to 375*.
  • Cook ravioli according to package directions in salted water. While you are waiting for your water to boil/cooking the ravioli, begin on your sauce.
