This was one of the first recipes I ever learned. It's easy and great for introducing kids or young adults to cooking. The best part is - it tastes great too! My family loves when I make this dish and the ease in which it's prepared is still appreciated all these years after it was first mastered.

CHEESY CAULIFLOWER & SMOKED SAUSAGE BAKE

Cheesy Cauliflower & Smoked Sausage Bake image

I had a half a pound of smoked sausage and didn't want to just fry and serve it up. I did a bit of " Freezer Diving " ;) and found a bag of cauliflower. So, I combined that with the smoked sausage, a few extras, and a cheese sauce and this is what I came up with. :)If you wanted to, you can cook about 1/8th. to 1/4th cup of finely chopped onion with the sausage. And to make this a One- Dish meal, just add some frozen peas. I want to thank Chef#64642 ( Molly53 ) and Chef#546010 ( Chicagoland du Jour ) for coming up with the name for this recipe.I know that this looks complicated, but it's really easy to make.Submitted to Food.com ( a.k.a. 3 cups Idaho potatoes, peeled, boiled and cut into cubes when cool, approx. 1 lb
4 tbsp butter
4 tbsp flour
2 cups milk
1/2 tsp salt
1/4 tsp pepper
1/2 lb Velveeta cheese, diced
1/2 cup sharp cheddar cheese, shredded
1 lb skinless smoked sausage (Eckrich is my favorite brand)
1/8 tsp paprika

Steps:

  • Cut sausage in half, lengthwise and then chop into ½ inch half moon cuts. Cook in a saute pan for about 15 minutes turning frequently, until slightly brown. Meanwhile, put cooked and diced potatoes in 2 quart casserole. Add cooked meat and give it a gentle toss. Mix butter, flour, milk, salt, pepper and Velveeta cheese in a saucepan over medium heat until warm, melted and smooth. Use a whisk and stir constantly. Pour white cheese sauce over potatoes and meat. Sprinkle shredded sharp cheddar cheese on top and then sprinkle paprika evenly over the top. Bake in preheated 350°F. oven for 35-45 minutes, until golden brown on top. Note: you can substitute ham for sausage

Tips:

  • Choose high-quality ingredients for the best flavor. Fresh cauliflower, flavorful smoked sausage, and sharp cheddar cheese are all essential.
  • Don't overcook the cauliflower. It should be tender but still have a slight crunch.
  • Use a variety of cheeses for a more complex flavor. Try a combination of cheddar, mozzarella, and Parmesan.
  • Add some bread crumbs or crushed crackers to the top of the casserole for a crispy texture.
  • Bake the casserole until it is golden brown and bubbly. This usually takes about 30 minutes.
  • Let the casserole cool for a few minutes before serving. This will help it to set and make it easier to slice.
