1 pound garlic summer sausage, casing removed and quartered lengthwise
2 small zucchini, cut in half lengthwise
2 yellow summer squash, cut in half lengthwise
1 medium sweet red pepper, halved and seeded
1 medium sweet orange pepper, halved and seeded

1/2 teaspoon salt

2 tablespoons Dijon mustard
1 tablespoon olive oil
1 lb smoked sausage, cooked and diced
1/2 cup roasted red pepper, diced
1/2 cup red onion, diced
2 (15 1/2 ounce) cans cannellini beans, rinsed and drained (white)
1/3 cup fresh parsley, chopped
salt and pepper, to taste

Steps:

  • Whisk together the vinegar and mustard and incorporate the oil into the mixture slowly.

This salad recipe is an original. I tried it one night just to see how it would do. Uncertain about my finished product, and never seeing this before, it was a self made contest. 2 bunch(es) romaine lettuce leaves, washed and torn into bite side pieces
1 - red bell pepper, cored and sliced into strips
1 bunch(es) small, green onions (about 12 to pack) chopped
1 package(s) 16 oz smoked, kielbasa sausage, cut into 1 inch slices
2 - egg, hard boiled, peeled and cut in half
3 tablespoon(s) fresh grated parmesan cheese
2 - 3 inch wide slices of cheddar cheese
- garlic flavored croutons
2 tablespoon(s) light olive oil
DRESSING:
4 tablespoon(s) olive oil, extra virgin
2 tablespoon(s) balsamic vinegar
1 teaspoon(s) salt
1/4 teaspoon(s) black pepper

Steps:

  • 1. Place torn lettuce in a large salad bowl and set aside. This lettuce should be crisp and crunchy.
  • 2. Place the 2 tablespoons of olive oil in a large and heavy fry pan on medium high heat. When oil is hot add sausage slices, green onion pieces and red pepper strips. Turn with spatula to coat with oil. Continue to fry until sausage is brown. Remove from pan onto paper towels and drain.
  • 3.When is sausage mixture has begun to cool but remains warm. Spread over top of torn lettuce, equally divided.
  • Place egg halves and wedge of sharp cheddar cheese around edge of sausage mixture and on top of lettuce. Kind of tuck them under a little.
  • DRESSING: mix the olive oil, Balsamic Vinegar, salt and pepper in a container and shake to mix well. Sprinkle over salad.
  • Add grated Parmesan cheese and garlic Croutons on top...Eat immediately
