LIGHT SMOKED SAUSAGE SKILLET

Light Smoked Sausage Skillet image

This is delicious! It's Weight Watcher friendly. Each serving is 5 points. This is a great way to use up your odds and ends in the fridge; in fact, that's how I came up with the recipe! The key is to use a light hand with the cooking spray, so as not to add points.

Provided by Amanda Beth

Categories     One Dish Meal

Time 40m

Yield 4 serving(s)

Number Of Ingredients 5

3 medium potatoes, peeled
1 large onion
1 large green pepper
1 medium red pepper
14 ounces smoked turkey sausage

Steps:

  • Spray large skillet with cooking spray. Heat skillet over medium high heat.
  • Cut potatoes in half, then slice each half thinly. Place into preheated skillet. Remove from heat, spray again with cooking spray. Return to heat.
  • Cut onion in half, slice each half thinly. Separate onion, add to skillet. Remove from heat, spray with cooking spray. Return to heat.
  • Slice both peppers thinly, then add to skillet. Remove from heat, spray with cooking spray, return to heat.
  • Slice sausage on an angle thinly. Add to skillet. Remove from heat, spray with cooking spray, return to heat.
  • Cook until potatoes are browned and cooked through, and peppers are soft.

Tips:

  • Choose high-quality smoked sausage: Opt for a flavorful smoked sausage that will hold its own against the other ingredients in the dish.
  • Slice the smoked sausage evenly: This will ensure that the sausage cooks evenly and doesn't become overcooked or undercooked.
  • Use a large skillet: This will give the ingredients plenty of room to cook without overcrowding the pan.
  • Cook the sausage over medium heat: This will allow the sausage to cook through without burning.
  • Add the vegetables and cook until tender: The vegetables should be cooked through but still retain some of their crunch.
  • Add the seasonings and stir to combine: This will help to evenly distribute the flavors throughout the dish.
  • Serve immediately: This dish is best served hot and fresh out of the skillet.

Conclusion:

Smoked sausage skillet is a quick, easy, and flavorful meal that is perfect for busy weeknights.
