This is the way I have been making my chili for years. It isn't too mild. It Is a nice thick meaty chili. It isn't too spicy. It is just right! Hope you all love it!!

1 1/2 - 2 lb 80 % lean ground beef
1 can(s) 28 ounce can crushed tomatoes
2 can(s) 14.5 ounce cans chopped tomatoes
1/3 c chili sauce
2 Tbsp canola oil or olive oil
1 large sweet onion chopped
1 green bell pepper chopped
3 clove garlic chopped fine
2- 4 oz optional canned green chili's
1 optional chopped jalepeno or 6 slices jarred and chopped jalepeno peppers
15 1/2 oz can pinto beans rinsed and drained
15 1/2 oz can kidney beans rinsed and drained
15 1/2 oz can black beans rinsed and drained
1 bay leaf
3/4 tsp salt
1/2 tsp roasted cumin powder
1/2 tsp oregano
3 tsp chili powder
1/4 tsp cayenne pepper
1 optional : a squirt of ketchup as desired for a little sweetness
GARNISH OPTIONAL TOP OF EACH SERVING
1 c mexican cheese blend for serving
dollop of sour cream

Steps:

  • 1. In to a large pot pour the crushed tomatoes,and the 2 cans of diced tomatoes. Add the chili sauce,and 3 cans of beans and stir well.
  • 2. Fry hamburger until cooked through. Leave some what chunky. Drain grease from it and add it to the pot. In fry pan add oil. Cook bell pepper,and onion until done and onions are nicely caramelized. Add garlic last and heat for 30 seconds until fragrant. Add to the pot with tomatoes.
  • 3. heat pot to medium high heat. When it starts to boil. Lower heat to low. Add the green chili's,and Jalapeno pepper to the pot with the herbs,and spices. Stir well to combine. at this time sample sauce. If you want a little sweetness. add small squirt of ketchup. add a little at a time. stir and taste to desired sweetness.
  • 4. Cook on low heat uncovered for 2 hours. Stir from time to time as not to burn the sauce. Sauce will thicken and reduce some as it cooks. Top individual portions with Mexican cheese,or sour cream. and serve.

3 ½ pounds ground beef chuck
1 pound ground pork
½ cup meat drippings, or as desired
1 cup minced onion
4 cloves garlic, minced
1 (12 fluid ounce) can or bottle Irish stout beer (such as Guinness®)
1 cup tomato paste
1 cup water
½ cup beef stock
3 tablespoons chili powder
2 tablespoons ground cumin
2 teaspoons dried Mexican oregano
2 teaspoons smoked paprika
1 teaspoon ground coriander seed
1 teaspoon unsweetened cocoa powder
2 tablespoons chipotle-flavored hot sauce (such as Tabasco® Chipotle Pepper Sauce)
2 tablespoons cornmeal
2 tablespoons all-purpose flour

Steps:

  • In a large soup pot over medium heat, cook and stir the ground chuck and ground pork until the meat is browned, about 15 minutes, breaking the meat into crumbles as it cooks. Drain off the excess grease, reserving about 1/2 cup of drippings, and cook and stir the onion and garlic until they begin to brown, about 10 minutes.
  • Stir in the stout beer, tomato paste, water, beef stock, chili powder, cumin, Mexican oregano, smoked paprika, coriander seed, cocoa powder, chipotle-flavored hot sauce, cornmeal, and flour until thoroughly combined, and bring to a boil. Reduce heat to low, and simmer, stirring occasionally, for 8 hours.

A unique chili using a mixture of meats. It is spicy and loaded with flavor. The name of this recipe used to be Chili Colorado, but I challenged my new friend, Chef #383557, to make and rename the recipe for me after he pointed out that it was not a typical Chili Colorado recipe. (Please see his delightful review. I changed the measurement of the stew meat because if his review and because I also prefer more of this meat in my chili. 1 lb hamburger
3 large jalapenos, seeded and chopped
1 lb hot breakfast sausage (I prefer Jimmy Dean's)
1 lb stew meat
1 cup chopped onion
3/4 cup chopped bell pepper
1 (15 ounce) can kidney beans (optional)
3 tablespoons chili powder
1 teaspoon salt
3 garlic cloves, minced
1 (6 ounce) can chopped green chilies
1 (15 ounce) can chopped tomatoes
2 (15 ounce) cans tomato sauce
1/2 teaspoon sugar
1 tablespoon cayenne
1 teaspoon oregano
2 tablespoons jalapeno juice
1/4 teaspoon garlic powder
3/4 teaspoon Tabasco sauce
3 1/2 tablespoons cumin
1/2 teaspoon onion powder

Steps:

  • Marinate stew meat with jalapeno juice, onion powder, and garlic powder.
  • Refrigerate 24 hours.
  • Brown hamburger with onion, garlic, bell pepper and 1/2 tablespoon cumin.
  • Brown sausage.
  • Remove stew meat from marinade and brown.
  • Mix all the meat together.
  • Add tomato sauce, tomatoes, drained beans, jalapenos, chili powder, 3 tablespoons cumin, cayenne, oregano, green chilies, salt, sugar, and Tabasco.
  • Cook on medium heat for 2 hours.

1 (16 ounce) package Jimmy Dean sausage
4 (29 ounce) cans whole canned tomatoes (cut into fourths or eighths)
1 (29 ounce) can tomato sauce
1 (16 ounce) can kidney beans (washed)
1 (16 ounce) can black beans (washed)
1 red onion, chopped
6 jalapeno peppers, chopped
3 serrano peppers, chopped
3 stalks celery, chopped
4 garlic cloves, chopped
2 tablespoons Tony Chachere's Seasoning
3 tablespoons smoked paprika
3 tablespoons chili powder
2 tablespoons cumin
1 tablespoon ground pepper
1 teaspoon kosher salt

Steps:

  • Call friends and family, let them know you are about to make some awesome Chili, and to be in your kitchen in about an hour.
  • Before the stampede, grab a large (8qt) pot and brown the sausage on high heat (do not drain). The idea here is to get some good browning/sear in the pan so don't fret if it sticks to the bottom, that's the idea. Just don't go overboard and burn it.
  • Throw in the celery, onion and garlic, cover, reduce heat and let it do it's thing for 10 minutes at least. stir frequently.
  • In a separate pan, brown the ground beef (drain) and add it to the pot.
  • Everything else goes in! Be sure to include all the juice from the whole-tomato cans, and I like to cut them very chunky (no more than 3 cuts per tomato) for easy eating.
  • Let it come together at a high simmer for about an hour, less if you can't wait.

1 1/2 pounds boneless beef sirloin steak or top round steak, 3/4-inch thick, cut into 1/2-inch pieces
1 medium onion, chopped (about 1/2 cup)
2 cloves garlic, minced
3 cups Pace® Chunky Salsa, any variety
1/2 cup water
1 tablespoon chili powder
1 teaspoon ground cumin
1 can (about 15 ounces) red kidney beans, rinsed and drained
1/4 cup chopped fresh cilantro leaves

2 tablespoons olive oil

Steps:

  • Heat 1 tablespoon oil in a 6-quart saucepot over medium-high heat. Add the beef in 2 batches and cook until it's well browned, stirring often. Remove the beef from the saucepot.
  • Add the remaining oil and heat over medium heat. Add the onion and cook until it's tender. Add the garlic and cook for 30 seconds.
  • Add the salsa, water, chili powder and cumin. Heat to a boil. Return the beef to the saucepot. Stir in the beans. Reduce the heat to low. Cover and cook for 1 hour. Uncover and cook for 30 minutes or until the beef is fork-tender.
  • Sprinkle with the cilantro and Chili Toppings, if desired.
  • Chili Toppings: Chopped tomatoes, chopped onions or shredded cheese.
