¼ cup mayonnaise
2 ciabatta rolls
1 tablespoon olive oil, divided
2 slices provolone cheese
1 cup whole fresh spinach leaves, divided
¼ pound thinly sliced mesquite smoked turkey breast
2 roasted red peppers, sliced into strips

Steps:

  • Mash the avocado and the mayonnaise together in a bowl until thoroughly mixed.
  • Preheat a panini sandwich press.
  • To make the sandwiches, split the ciabatta rolls in half the flat way, and brush the bottom of each roll with olive oil. Place the bottoms of the rolls onto the panini press, olive oil side down. Place a provolone cheese slice, half the spinach leaves, half the sliced turkey breast, and a sliced roasted red pepper on each sandwich. Spread half of the avocado mixture on the cut surface of each top, and place the top of the roll on the sandwich. Brush the top of the roll with olive oil.

8-12 slices bacon
1/3 cup sun-dried tomatoes (packed in oil, rinsed, patted dry and minced)
1/3 cup light mayonnaise
8 slices thick-cut crusty bread
1/2 pound thinly sliced deli Swiss cheese
1/2 pound thinly sliced deli smoked turkey
3 cups baby spinach or arugula

Steps:

  • Cook bacon until crisp. You can use a skillet or use the microwave, placing the bacon in a single layer on a paper-towel lined plate, cover with paper towels and microwave for about 5 minutes (repeating the process if all the bacon doesn't fit the first round). In a small bowl, combine the sun-dried tomatoes and mayonnaise.
  • Lightly spread butter over one side of each bread. Lay the butter-sides down on a cutting board or work area. Spread each slice with the sun-dried tomato mayonnaise. Layer half of the cheese on 4 slices of bread then top with turkey, bacon, spinach (or arugula) and remaining cheese. Top with remaining bread, butter side up.
  • Cook the sandwiches on a panini press, skillet or grill pan heated on medium heat for one minute prior to cooking. I use an indoor grill pan for my paninis but a skillet would work just as well. I place 2-3 sandwiches (depending on the size of the sandwich) in the grill pan and weigh the sandwiches down with a heavy pot (you can also use a foil-covered brick or similar object). Cook the sandwiches for about 4-5 minutes per side, until they are golden brown and the cheese is melted. Repeat with remaining sandwiches. Serve immediately.

8 slices bread (I like Cibatta or a good Italian bread)
16 slices smoked turkey, sliced (deli is fine, but not shaved or chipped)
4 plum tomatoes, lightly seeded and roasted
4 tablespoons mayonnaise
1 teaspoon olive oil
1 teaspoon salt
1/2 teaspoon ground black pepper
4 ounces gouda cheese, smoked (approximately 1 cup)
8 slices bacon (smoked or hickory)
2 cups arugula
1 avocado, thin sliced

Steps:

  • Tomatoes -- Roasting the tomatoes. Just cut in quarters (de-seed, just lightly squeeze to get rid of most of the seeds), drizzle with olive oil, salt and pepper and roast at 400 for approximately 15 minutes until somewhat soft but not over done. Remove and let cool. Once cool dice fine and mix with the mayonaise, some salt and pepper. Cover and chill.
  • Bacon -- Honestly, just cook in the microwave. Put on a paper plate topped with a paper towel topped with the bacon and then top with another paper towel and cook 3-4 minutes until crisp. Remove and let cool as you build your sandwich.
  • Sandwich -- Spread the tomato mayonaise on the bread, top with cheese, 2 slices of bacon, arugula, avacado and turkey, more cheese and top with another slice of bread spread with the tomato mayo. Put either on a lightly oiled grill pan, panini press or just a regular non stick pan. If you don't have a panini press, just weight down sandwich with a heavy pan or a brick wrapped in foil. Anything heavy will work. Sometimes I will just add a couple of heavy cans to a small pan and it works just fine. Just something to weight them down a bit. Cook until golden brown. Let cool a few minutes and slice.

8 slices bacon
1 tablespoon butter
2 cloves garlic, minced
½ red onion, thinly sliced
3 cups fresh spinach leaves
½ cup reduced-fat mayonnaise
2 chipotle peppers in adobo sauce, minced
1 teaspoon adobo sauce from chipotle peppers
8 (4 inch) pieces focaccia bread
4 slices provolone cheese
½ pound sliced deli turkey meat

Steps:

  • Preheat a panini press according to manufacturer's instructions.
