1 pound thick sliced bacon, cut into 1 inch pieces
4 cups fresh green beans, trimmed and snapped
2 large onions, chopped
2 tablespoons minced garlic
2 cups water
⅓ cup brown sugar
½ cup Worcestershire sauce
salt and pepper to taste

Steps:

  • Heat a large skillet over medium heat. Add bacon, and cook until browned, but not yet crispy. Push bacon to the sides of the skillet and add the onions and garlic to the bacon grease. Cook and stir until onions are barely translucent. Stir in the green beans, and cook for 15 minutes, stirring occasionally.
  • Pour in the water, and mix in the brown sugar, Worcestershire sauce, salt and pepper. Simmer over low heat uncovered until water has evaporated and green beans are tender, about 1 hour.

6 thick slices bacon, chopped
½ cup onions, minced
1 teaspoon minced garlic
1 pound fresh green beans, trimmed
1 cup water
⅛ teaspoon salt
1 pinch ground black pepper

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until the fat begins to render. Stir in onions and garlic; let cook for 1 minute. Stir in beans and water. Let the beans cook until the water has evaporated and the beans are tender. If the beans are not tender once the water has evaporated, add a small amount more water and let them cook until tender. Season with salt and pepper (to taste) and serve.

Recipe comes courtesy of "Emeril Live". I watched him make these recently and just had to give them a try. Very good side dish recipe and even my 11 year old scarfed them up. Did modify the recipe to fit our tastes a bit, but did stay with all of his ingredients. Prep time includes trimming the beans, chopping the bacon, and mincing the garlic & shallots.

3/4 lb fresh green beans (small & ends trimmed)
1/4 lb bacon (chopped)
1/2 cup shallot (minced)
1 teaspoon garlic (minced)
1 tablespoon flour
1/2 cup chicken stock or 1/2 cup chicken broth
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon cooking sherry

Steps:

  • Bring a large pot of salted water to a boil.
  • Add the beans and cook until tender, 2 to 3 minutes.
  • Drain in colander and transfer to an ice bath.
  • Drain well.
  • Fry the bacon in a large skillet and cook until crisp and golden (approximately 5 minutes).
  • Add the shallots& garlic and cook for 2 minutes.
  • Add the flour and cook, stiring constantly for 2 minutes.
  • Add the stock, salt, pepper, and wine and cook until thickened (about 4 minutes).
  • Add the green beans and cook until warmed through (2 minutes).

5 (15-oz) cans green beans, drained
1 lb bacon
2/3 cup brown sugar
1/4 cup butter, melted
1/4 cup low-sodium soy sauce
1-1/2 tsp garlic powder

Steps:

  • Preheat oven to 350 degrees. Pour drained green beans in an ungreased 9x13-inch pan. In a large skillet, cook bacon until almost done but not too crispy. Remove from skillet, drain on paper towel and chop. Sprinkle cooked bacon on top of green beans. Whisk together brown sugar, melted butter, soy sauce and garlic powder. Pour over green beans. Bake for 40 minutes.
